    Never tried adobong talong. Looks delish so I will try this recipe but less vinegar might not even fry the talong to minimize the use of oil. 😊

    Not a bad recipe at all. I found that the vinegar imposed a predominantly sour taste. Added butter to neutralize the vinegar taste. Perhaps adding a little water can help tone down the effect of the vinegar.

    For the folks who are concerned with the oily part of the cooking (as I do also), I'd suggest to transfer the fried eggplant directly from the frying pan onto a paper towel and let the paper towel absorb some of the grease. Better yet, for some who may have health concerns with frying oil, I'd further suggest using extra virgin olive oil for frying. It's been noted that EVOO is a healthier alternative to corn oil, vegetable oil, lard, or canola oil.

      I appreciate your comment on the video. I agree. I have been using EVOO on my cooking videos for about a year now. Yes, you are right. Paper towel does absorb the oil and eggplants have a tendency to absorb so much oil when fried and it is hard to get around it. I have learned a lot and willing to learn more. Thanks.

    Hi, Ditty! Thank you for sharing your recipe! I used to have that dish when I was growing up and loved it. Although, I haven't had it in more than half a century (56 years to be exact) since I had moved out of the country. After watching your video, I'll definitely try making it. Just one comment on the ingredients, sometimes my mother will incorporate bagoong instead of patis. Thank you much again for presenting it calmly and at a good rate of speed.

    Looks so yummy but also so oily! Na absorbed ng talong lahat na oil during frying. So, kung gaano kadami ang oil na nilagay mo for frying iyon lahat ang nasipsip ng talong.

      Thanks for the comment. Yes po, talong has a tendency to do that when fried. I agree and I should have let some of the oil drain and be absorbed in paper towel.

      Sorry po. Sa demographics ko po kasi, madami po ang mga nanunood from other countries at gusto rin nilang matutong magluto ng Filipino food. Di naman siguro sa bagay lang ang dapat na mag English, ang importante naintindihan universally at tama naman ang grammar. Sayang din naman ang cumlaude ko sa BA English. hehe.

    Your liquid ingredients are not proportioned .also too much black pepper and not enough bay leaves...the way you fried your egg plants is not balanced...needs improvement!

      Thanks for the comment. I find the odor of bay leaves overwhelmingly strong so I only put one leaf because for me, it destroys the aroma and taste of adobo. It doesn't mean how I do it is wrong. I am not sure what you mean by balanced frying of eggplants, so I need to look that up in order to improve. I don't have exact proportions of the ingredients for the reason that it would depend on personal preference and for how many people you are cooking for.
