Actually stated in the Knights of the Old Republic game, The "True Sith" were a species that died off along time before the start of KOTR. The "Sith" users clarified today are followers of an ideal. True Sith were sith such as Naga Sadow, Exar Kun, Adjunta Pall etc.

By the way, I'm afraid you're wrong about one thing. Sith (race) could not become extinct before KOTOR. There are many of them in the Sith Empire on Dromund Kaas. They are even playable race in SWTOR game. So it must have happened much later.
I am afraid you are wrong. This fact is can be seen on the loading screens of the first KOTOR game. I just finished the game recently and remember seeing it fairly often. Also, as I am sure you know, "true" sith are classified as a species of red-skinned Humanoids that originated on the world of Korriban." (Taken from the SW wikia.)
Also here is a text taken from the Star Wars Wikia that explains the True Sith as a species:
"In the Sith Empire, as time progressed pure-blooded Sith were steadily bred out resulting in only a few pure-blooded Sith left in the Sith Empire by the time of the Great Hyperspace War (which taken place before the events of KOTOR) Long after, the true species in the Empire were believed to have gone extinct due to the interbreeding process."
Kylo Ren isn't a real Sith. He is a Knight of Ren, which is basically a Sith in the new JJ Abrams universe, but still.

Kylo Ren would be classified as a Dark Jedi, if that concept is still canon. Basically anyone who uses the Dark Side of the Force but wouldn't be considered a Sith or Jedi by neither side. Or maybe the new canon retconned it to the Knights of Ren.
Lord Woffingshire Actually Ventress was considered a Sith Assassin she trained under Dooku after she left the Jedi order. So she could technically be considered a Sith.

There are more known sith than just the ones that i have listed that you have missed, IGN.
Also, using the Dark Side does not automatically grant you the title of Sith. To become a Sith, one must not only accept the Dark Side of the Force, but also it's philosophy. This includes accepting the code of the Sith, which I will type below this paragraph:

Those who are not bound to this code and who don't accept it are not Sith, but simply, Fallen Jedi/Dark Jedi, or in other cases, just Dark Side Users.
Now, before you make a video titled "every star wars sith ever" or "every dark side user ever", you need to include EVERY known Sith or Dark Side User that has ever existed, whether in Canon or Legends (EU), not just the ones from Canon.

Just to let u guys know: Darth Plagueis is a Muum from the planet Muunelinst and trained Darth Sidious. His half-siblings had a rare genetic problem that his siblings had but not Plagueis as he had a different mother. They all died. He inherited all of his father's belongings and was known as Hego Damask (or Magister Damask). There is more but like imma not go into it

Ventress, Talzin, Savage, the son, pong krell, Harris offer, quinlan Vos, inquisitors, Ezra, Kylo ren, the knights of ren and snoke are all not Sith.
Jacob Ventress was a Sith Apprentice, Talzin was a Sith Creator who is A Sith, The son if the Dark side of the force, Pong Krell fell to the Dark side, and so on but Ezra fell a bit off the light to the dark, then the light.
Jacob Snoke is a Sith, hes own name say it. Sith No One Knew Ever. This is canon, it's how they figured out his name for the movie.

Some of them may not have been sith, but they certainly act like the type. I mean the titles and ranks on some of these guys were kind of based off of names like sith ranks, class, and titles. They ae Assassins and inquisitors, which are like sith Inquisitors and Sith Assasins. Even If they are sith, here's what their ranks, class and titles would be. Though others are already are, cause they are sith.

Kylo Ren is a force user with a lightsaber.
The inquisitors came after bane, denying the rule of 2 and not truly being Sith.
Mother Talzin and the Nightsisters are just a species.
The son was never a Sith.

I would reccomend reading the Darth Bane trilogy. That book talks about His apprentice Zannah. I would also read Darth Plagueis.
