Cream Cheese Dimsums Recipe without Potato & Wheat Starch - Without Dimsum Basket & Softest Momos

    Ingredients-
    For the filling-
    5-6 water chestnut (you can use spring onions or Lotus stem alternatively)
    3/4 cup Cream cheese
    1/4 tsp Aromat powder
    1/4 tsp black pepper powder
    For the dough-
    (makes 20 dimsums)
    75g maida (9 1/2 tbsp)
    25g cornflour ( 4 tbsp)
    105-110g water (2 tsp less than 1/2 cup),
    Salt to taste
    To garnish and serve-
    Magical chilli crunch oil
    Spring onions
    Soy sauce
    Method-
    Cut and chop the water chestnuts finely using a chopper and then wash them thoroughly in water.
    Now, transfer to a muslin cloth and drain out all the water very well. Set aside
    For the dough, heat water to boiling with some salt and as it boils, turn off the gas. Mix in the flour mixture and combine well.
    Transfer to a parat and knead a soft dough while the mixture is still hot.
    Cover and allow to rest for 20-25 minutes.
    Meanwhile, mix in all the filling ingredients together and set aside.
    Now, divide the dough into half and then divide one of them into 10 portions and roll them out thinly. DO NOT USE ANY DRY FLOUR.
    Ensure to keep the edges thinner than the centre.
    Place the filling in the centre and shape the momos as shown. Keep aside and cover it. Repeat and make all.
    Place a parchment paper on a plate and steam the dimsums on high flame in a preheated steamer for 6-7 minutes.
    Remove, serve hot with chilli crunch oil, garnish and enjoy!!!
    Vishesh Tippani-
    The ratio of maida: cornflour must be 3:1.
    Do not scrape out or incorporate the flour which gets stuck to the Pan while mixing. It will affect the texture of the dough.
    Also, while kneading if your dough feels dry, add in a tsp of hot water to it.
    Do not use any dry flour while rolling the dough.
    Ensure to keep the dough as well as the dimsums covered at all times to prevent them from drying.
    Serve immediately!
    Tastes best when served hot with the magical chilli crunch oil
    The steamer must be preheated for proper and uniform cooking.

    I tried this today and it was amazing! I added a bit of ricotta cheese and spring onions too with a little bit chilli oil in yhe filling! Tasted amazing!

    It looks super easy. Definitely going to try it. I have few questions:
    1. Are we supposed to use the green or the black chestnuts? What would be the boiling time for these chestnuts?
    2. Is it required to use a plate for steaming dim sums or can we use something which has holes? Would that have any affect?
    Please share your chilli oil recipe too. Also can we chilli oil recipe without garlic just in case it has one. Thank youuu! :)

      You can use the green ones, Peel it & steam for 10 mins before cutting.
