It is basically Fruit Salt - You can use 15:0 Baking Soda + 1 tsp Citric Acid instead also. Basically 50:50 of Citric acid & Baking soda
It's a fruit salt for acidity ...most pharmacies have it

Hello ! Yes, salt can be increased slightly. Not too much. Lemon can be used. Not a problem. Maybe you’ll need s bit more.

@@nehadeepakshah I think it does if you use a good quality brand. How is tofu made? It is nothing but oat milk paneer.
You can try in small amounts if you are unsure, that is what I do 😊

It is regular salted Amul Butter. Basic white vinegar is perfect.
Also additional salt because cheese is slightly salty
