Making Pomegranate Wine and Brandy

- I was only able to find one Recipe on making Pomegranate Brandy and Wine before making this vid, so I decided to try it for myself.
Even though the wine component was a Fail to me, the flavor may be liked by others (probably the reason I could not find much on Pomegranate wine).

(Edit)... After the high cost of materials for this project and the drawn out time-frame for completion, it was a disappointment not to have a palatable wine. after completion I thought the flavor was too intense and may have benefited from using more water, less chemicals, some raisins as a yeast nutrient and additional flavor, and more white and brown sugar in the wash. I have since found a couple of other recipes that think the same way as I and I am looking forward to re-doing this wine exercise and NOT using the recipe below......... On a more positive note, the below recipe did give me a good product that distilled into a reasonable Pomegranate Brandy.

Pomegranate Wine
This simple one-gallon pomegranate wine recipe is easy to make at home with fresh pomegranates or bottled pomegranate juice.
Ingredients
• 96 ounces pomegranate juice (I used 8 ltrs Juice)
• 2 lbs sugar (I used 1.5kg Dextrose to increase potential to 15% ABV)
• 1 tsp yeast nutrient or up to 1 pound raisins (I used 1 tsp DAP)
• 2 tsp acid blend or 2 tbsp lemon juice (I used two level tsp Citric Acid)
• 1/2 tsp tannin powder or 1 cup strongly brewed black tea (I used 2 cups tea)
• 1 packet wine yeast (I used Mangrove Jacks R56)
• water to fill (I did not use any added water, just using the water in the fruit Juice)
• 1 tsp pectic enzyme

Great video mate .... nice to see some Aussie content. Agree with the still spirits spirals, use them often ... the French Oak ones are good for a Brandy, made an Apple one (12L of Golden Circle, 1.5kg sugar and EC1118) that turned out really nice.

Pomegranate juice is very pricey here in the states. I'd love to try it though
Here in Aus, 1 litre of juice costs $6.
For this project I spent $48 on the Juice and $9 for two fruit for display purposes only.

Interesting vlog,,,,,,not sure people are aware that many wines are boosted with alcohol to raise the ABV content of the wine
I hear you Ken, get a nice tasting thick concentrate cordial and throw in some ethanol
Pity about the wine fail I would have been interested in what it would have tasted like. Good news about the brandy though.
Hey Percy, I have been thinking that it was over the top strong because of lack of water. I am tempted to try it again adding as much water as the juice I use and topping it up with Glucose to get a reasonable ABV.
@@pauljacobs5390 I wouldn't be too concerned with the ABV, 10% would be plenty, the real question, for me at least, is it a wine or just fortified fruit juice? If you get what I mean.
I think getting the juice and progressively watering it down and sweetening it. If it tastes ok after watering and sugaring, it should also taste OK after fermenting......
I have tasted distinct differences in a wash after it ferments. Fortified Wine is low ABV wine that is boosted up with distilled ethanol from the same batch to a higher ABV above what the yeast can manage. The character differences in the wine after distilling are significant. But then again, I am still learning here Percy.
