How to Make Pickled Chillies

- At Speedy Romeo (www.speedyromeo.com) on New York’s Lower East Side, you’ll find a jar of pickled chillies on every table. Customers there put them on everything, from pizza to salad to crostini. Chef-owner Justin Bazdarich says people are constantly asking him for the recipe so they can make it at home. For the first time, he reveals his devilishly simple steps to making these delicious hot peppers. He starts by slicing Italian long hots thin, adds a clove of sliced garlic, massages in a tablespoon each of sugar and salt, then adds a cup of good white wine vinegar. He lets those sit for two hours, then packs them in jars with the vinegar so they’ll keep for up to a month in the refrigerator.

We've used the same method with onions, and it makes some of the best pickled onions we've had. Put them on top of loaded baked potatoes, sandwiches, pizza and more. Keep them in a jar in the fridge at all times.

This sounds delicious.
I've used this recipe for years. It's easy and totally worth the work. It takes around 5 minutes to make them. Not only is it great to put on almost everything - it is also a really appreciated gift for friends or almost anyone. Put them in a one dollar jar from IKEA as a present and wrap them in foil with a bow when getting invited to a place for the first time or use them on sandwiches for you friends. They'll make you look like a star :) Combined with flowers You will be the best guest in the world.
Should the vinegar cover the chillies in the bowl when leaving for 2 hours?

In the UK white spirit vinegar best for pickling..I don't like malt vinegar which we get a lot in the uk
Easy and great with habaneros.
If you mix chilis by hand don't go to the bathroom and pee, it hurts very bad.
I tried this, but it gets bitter...what should I do to remove the bitterness?

Hi Jay. The recipe here is one table spoon of sugar and one table spoon of salt to one cup op vinegar. That's the brine. I think around 12 or 14 sliced Jalapenos or any chili the size of your pinky would fit that brine in a jar. The most important part is that the peppers are covered with brine when you put them in the jar. The amounts are not really important. It's just a good place to start. You can put in more sugar or salt to your liking.
