I used to be a dishwasher at Olive Garden and I can tell you that when I raised concerns about dishes being dirty even after going through the machine, the other dishwashers didn't care. I also worked at another restaurant in the dish pit and they showed me how to scrub out the drain on the floor and then used the same scrubby on the dishes. I quit after 3 hours.

The other dishwasher didn't care that out of his negligent. The part about using the sponge to clean out the drain floor... you throw the sponge away after you use it. The drain floor cleaning is usually done at the end of the night.
@Wind how is it a good idea? Water has to be 150°+ for 20min or boiling for 5. Stupid idea when you actually think about it. Even if tou did bring them super hot water, it has to stay hot for an extended period of time.
I'm currently a dishwasher and I can confirm this. This is still misleading though because not all bacteria is dangerous and that's how you build immunity.
Thanks to the horrible ways my mother handled food while I was growing up, I have an amazing resistance or tolerance to/from most food borne illnesses. The only thing that got me was Salmonella. That knocked me down pretty bad, as in hospitalized. E coli? Not a problem. Listeria? Nope. So, I guess I owe my mom a big thank you for almost killing me for 19 years...lol.
I want to know more about the scientific process here. Also, a more accurate reading would have come from a bacteria meter on site with immediate results. The act of shipping these samples could have caused distortion in the results and possibly tarnish these restaurants reputation needlessly.
Bro if they messed up the shipping process then they would have all had ecoli on them. But they didn't. They didn't cross contaminate, and as you saw there were instances of the dishes being clean of harmful bacteria meaning they handled the swabs with care.

this seems like a non-issue... Bacteria will be on the plates, on food, on forks, everywhere. We've been eating off these plates our entire lives. we've got the immune systems for these bacterium. If we sterilize everything we'll fall ill more easily when a sterilization process isn't perfect.
That's... a good thought but that's not how it works. E Coli is E Coli. It will get you sick. The virus mutates and doesn't have antidote like with a bacteria. For the food, since it is going directly inside us with limited defensive barriers (e.g. skin, lymph nodes) with some viruses able to tolerate stomach acids, this can be bad for a person.
Bacteria is everywhere, on everything, and inside our bodies. If you get sick it happens all the time. If you cook at home you're dealing with bacteria too. Maybe not as bad.
Used to work for a restaurant once, we took turns to hand wash the dishes, cooking utensils, etc. I was washing and scrubbing and was told by a shift manager that it takes too long and to just do it quickly, dip them in soap and just rinse them off, I looked at her with shock and she said yeah I know it's disgusting but we're closing soon and you need to get through these large piles. Didn't stay too long there and I rarely eat out now.
A bit of advice, after working in restaurants most of my life, Whenever I go out to eat, when get your silverware, never be afraid to ask for coffee cup of hot water, boiling hot, hot enough enough to brew the teas, & let that soak in there for at least 3 minutes. I don't trust ANY restaurants casual & fine dining!
A lot of people would do this at a restaurant I worked at. But they just wanted to hold the mug to warm their fingers xD. Moms also do it to warm up their breast milk they have in bottles if it’s frozen. Never saw people wash the silverware
The thing is there might be a factor of error involved too. The sponge used to take samples might have been contaminated before hand or might get contaminated during transit. This seems like fear mongering. How many times have you been sick while eating out? A lot of these microbes might have previously entered our body and we might have developed immunity to it. All I'm saying is restaurants can do all they want but you can't ensure complete sterilization in an open environment.
I agree! It's not like it's a new, revolutionary thing either! Hotels have the exact same issues! Research was done & they found more bacteria on those remote controls than in the toilet bowl alone.
This is why I always ask for plastic ware and to-go cups if I am dining in. I saw on forensic files many, many years ago that detectives were able to obtain the DNA of a suspect from an improperly washed fork at a restaurant….. never again will I use silverware anywhere.

I worked in a restaurant in the fall of 2020, despite telling us the protocol was to wash hands before handling any plates / food, I would often be “asked” to help carry plates to tables without being allowed time to wash my hands (I was a hostess so I wasn’t always working with food but tried to be clean when I did). The unfortunate thing is restaurant culture encourages speed over most else.

As much as I agree with this but the issue I have is how long did it take to get to the lab for testing? How was it handled while getting it there? Was that sponge clean or dirty?? I’m sorry but no matter how badly they want to make us believe this, there’s always the possibility they might have smudged the results a bit, intentionally or by accidental.
You usually keep the sample in a sterile container. You dont mind them to grow in the cotton swab usually or whatever you collect. The goal is to determine the pathogen or bacteria on it. The microbiologist is questionable with her practices and presentation. You dont keep petri dishes in your office table and swab samples holding the petri dish tilted.
I used to work as a server for a catering company when I was 15 and all the servers would set the tables and we would polish the silverware and glasses too. Usually after the silverware came out of the dishwasher, they were just dumped into bins. I still remember this one time when I was polishing some spoons and one of the spoons has leftover food in it and I was so grossed out. I told someone who I knew had worked there a long time and she told me that I should just give it back to the dishwasher. But like… it was in the bin of “clean” spoons and so who knows how many other spoons it touched and if there were others with food still stuck to them. So gross.

Here’s a fact, since I’m a Student Culinarian: You always have to wash your hands and keep them clean regardless of what you touch - no surprise. But when your prepare ready-to-eat food (meaning cooked, or clean), you’re supposed to wear gloves so the food is not recontaminated. I’m surprised that the same doesn’t go for clean dishes.

There should be some kind of simple portable device that can detect bacteria on plates and utensils and restaurants should be required to make routine checks. If there’s an issue, they can take steps to figure out who or what is the cause. One lazy/negligent employee that uses a dirty phone or bathroom without washing afterwards or poor procedures for washing dishes can make a lot of people sick.
As a person suffering from severe contamination OCD, this issue is constantly in my mind even in my family's kitchen. It's exhausting and paralyzing to live with this mental illness.
Things you can do: • Bring your own Thermos / Mug. • Bring your own metal utensils, avoid plastic utensils because they have microplastic. Clean your utensils with 99% alcohol or dish soap, scrub manually with your hand, paper towel or sponge then rinse with hot water. Also you can pick up brand new forks that can be cleaned to double check, from Dollar Tree for $1.25 • Ask for styrofoam To-Go boxes instead of a possibly dirty plate. • Look at the bathroom, if it’s too dirty, the kitchen is probably very dirty too. • Bring iso alcohol wipes to wipe down the table and seats if you’re extra cautious.
I work at a restaurant and I never eat off our plates or with our silverware. I always opt for Togo boxes and plastic wear because you never know how clean silverware actually is at restaurants. Even how some of the servers handle the plates and silverware is kind of gross.

I was in charge of banquet equipment pre shutdown at a SF hotel. I would personally send everything thru the washer and it would be covered before being put on a clean food cart and then covered again. Silverware was double washed then air dried and only wiped down to get rid of spots. Glassware was washed then plastic wrapped to keep all dirt out. My boss hated the extra cost at first but no one ever got a dirty anything at my parties.
Also, we don't know how sanitary their sponges were that gathered the bacteria, and how about the guy collecting the samples, how do you know he didn't cough near the sponges. And even if you eat at home it doesn't mean that the food you purchased in the supermarket is going to be edible. For example since Covid the quality of a lot of household products have gone downhill. Campbell's Chicken soups, Amy's Frozen Dinners, Chock Full of Nuts Coffee to name a few. Sure you can return items but who wants to get sick from groceries and then to top it off have to go back to the store and return it.

For that same reason I carry my own pre-packaged plastic fork, knife, and spoon. I've seen too often people leave the toilet without washing their hands. So everytime I use a public restroom, I have my own paper towel in case there's a hand dryer. Most often public restrooms have doors you have to pull open instead of pushing.

I'm a server, I am extremely OCD about my silverware, I roll it so the part that goes into your mouth is completely covered, I always do an extra sanitizer bath, I literally keep a sponge and dawn under the sink for the glasses I use. It helps that my boss pays me well, and treats me great. I'm literally the only one who does this tho, so if you go out to eat, ask for me as your server 😉.

The difficulty between management and employees when the machine breaks down.Managers have to shut it down and switch to hand washing, employees wouldn’t have the time, some would run the machine cold and empty of detergent. Once there was more dirty dishes than clean, ended up with more people in the dish room than the floor backing up service. Don’t dare spent any overtime though, management isn’t paying for that
It's actually a bit misleading to say there were billions of bacteria on the dishes and silverware. If there were that many, they would have been visible to the eye. The billions were cultured in the lab from the samples. Bacteria multiply at an exponential rate, so you only need a few to end up with that result after the incubation period.
This is the exact reason why a health inspector would tell you to put your silverware in a glass of hot water at a restaurant. I remember one time I received stained silverware and I asked the waitress for a glass of hot water and another set of silverware she looked at me like I had two heads.

I will say , I worked at Olive Garden 2011. We were told my DMO that we shouldn’t be putting dishes back through unless we absolutely couldn’t pick off whatever was stuck . We wrapped silverware without gloves & in the janitor closet sooooooo, I can say first hand it’s nasty af lol

A bit of advice, after working in restaurants most of my life, Whenever I go out to eat, when get your silverware, never be afraid to ask for coffee cup of hot water, boiling hot, hot enough enough to brew the teas, & let that soak in there for at least 3 minutes. I don't trust ANY restaurants casual & fine dining!
At 150 its 20 mins at boiling its 5 mins so definitely more then 3 since it won't be boiling when you get it and will cool down fast
A lot of people would do this at a restaurant I worked at. But they just wanted to hold the mug to warm their fingers xD. Moms also do it to warm up their breast milk they have in bottles if it’s frozen. Never saw people wash the silverware
I highly doubt you'd be able to get off the bacteria with that, you need to keep the water hot enough for up to 20 or so minutes.

The thing is there might be a factor of error involved too. The sponge used to take samples might have been contaminated before hand or might get contaminated during transit.
This seems like fear mongering. How many times have you been sick while eating out? A lot of these microbes might have previously entered our body and we might have developed immunity to it. All I'm saying is restaurants can do all they want but you can't ensure complete sterilization in an open environment.
I agree! It's not like it's a new, revolutionary thing either! Hotels have the exact same issues! Research was done & they found more bacteria on those remote controls than in the toilet bowl alone.

This is why I always ask for plastic ware and to-go cups if I am dining in. I saw on forensic files many, many years ago that detectives were able to obtain the DNA of a suspect from an improperly washed fork at a restaurant….. never again will I use silverware anywhere.

I worked in a restaurant in the fall of 2020, despite telling us the protocol was to wash hands before handling any plates / food, I would often be “asked” to help carry plates to tables without being allowed time to wash my hands (I was a hostess so I wasn’t always working with food but tried to be clean when I did). The unfortunate thing is restaurant culture encourages speed over most else.
Ima be honest,I kno that stuff is as clean as it can be but I'm not expecting it to be immaculate. It's a public restaurant,get real. And all that corporate talk from the restaurants....spare us please. We don't need to hear their typed out letter about what they obviously don't care about
On the other hand, everyone has gone out to eat and we're still alive despite billions of bacteria on these dishes and silverware. And our ancestors didn't have steam sanitation or silverware even and a lot of people around the world don't live in such sanitary environment. So maybe these bacteria mostly coexist with us rather than being harmful. Perhaps it is more about your personal immune system than the bacteria outside. Perhaps its both but it can't be exclusively to just the bacteria.

You usually keep the sample in a sterile container. You dont mind them to grow in the cotton swab usually or whatever you collect. The goal is to determine the pathogen or bacteria on it. The microbiologist is questionable with her practices and presentation. You dont keep petri dishes in your office table and swab samples holding the petri dish tilted.
I used to work as a server for a catering company when I was 15 and all the servers would set the tables and we would polish the silverware and glasses too. Usually after the silverware came out of the dishwasher, they were just dumped into bins. I still remember this one time when I was polishing some spoons and one of the spoons has leftover food in it and I was so grossed out. I told someone who I knew had worked there a long time and she told me that I should just give it back to the dishwasher. But like… it was in the bin of “clean” spoons and so who knows how many other spoons it touched and if there were others with food still stuck to them. So gross.

Here’s a fact, since I’m a Student Culinarian: You always have to wash your hands and keep them clean regardless of what you touch - no surprise. But when your prepare ready-to-eat food (meaning cooked, or clean), you’re supposed to wear gloves so the food is not recontaminated. I’m surprised that the same doesn’t go for clean dishes.
Working in a restaurant kitchen the chemicals we used to clean the silverware needs to be upgraded because when we send it through the dishwasher when I replied the test that they did and it still was positive for bacteria

There should be some kind of simple portable device that can detect bacteria on plates and utensils and restaurants should be required to make routine checks. If there’s an issue, they can take steps to figure out who or what is the cause. One lazy/negligent employee that uses a dirty phone or bathroom without washing afterwards or poor procedures for washing dishes can make a lot of people sick.
As a person suffering from severe contamination OCD, this issue is constantly in my mind even in my family's kitchen. It's exhausting and paralyzing to live with this mental illness.

Things you can do:
• Bring your own Thermos / Mug.
• Bring your own metal utensils, avoid plastic utensils because they have microplastic. Clean your utensils with 99% alcohol or dish soap, scrub manually with your hand, paper towel or sponge then rinse with hot water. Also you can pick up brand new forks that can be cleaned to double check, from Dollar Tree for $1.25
• Ask for styrofoam To-Go boxes instead of a possibly dirty plate.
• Look at the bathroom, if it’s too dirty, the kitchen is probably very dirty too.
• Bring iso alcohol wipes to wipe down the table and seats if you’re extra cautious.

I work at a restaurant and I never eat off our plates or with our silverware. I always opt for Togo boxes and plastic wear because you never know how clean silverware actually is at restaurants. Even how some of the servers handle the plates and silverware is kind of gross.

I was in charge of banquet equipment pre shutdown at a SF hotel. I would personally send everything thru the washer and it would be covered before being put on a clean food cart and then covered again. Silverware was double washed then air dried and only wiped down to get rid of spots. Glassware was washed then plastic wrapped to keep all dirt out. My boss hated the extra cost at first but no one ever got a dirty anything at my parties.

Also, we don't know how sanitary their sponges were that gathered the bacteria, and how about the guy collecting the samples, how do you know he didn't cough near the sponges. And even if you eat at home it doesn't mean that the food you purchased in the supermarket is going to be edible. For example since Covid the quality of a lot of household products have gone downhill. Campbell's Chicken soups, Amy's Frozen Dinners, Chock Full of Nuts Coffee to name a few. Sure you can return items but who wants to get sick from groceries and then to top it off have to go back to the store and return it.

For that same reason I carry my own pre-packaged plastic fork, knife, and spoon. I've seen too often people leave the toilet without washing their hands. So everytime I use a public restroom, I have my own paper towel in case there's a hand dryer. Most often public restrooms have doors you have to pull open instead of pushing.
If a restaurant is this bad, imagine how bad a family members house is!

I'm a dishwasher. I run silverware through the machine twice. Once on flat rack then the second time in the silverware basket.
I'm a server, I am extremely OCD about my silverware, I roll it so the part that goes into your mouth is completely covered, I always do an extra sanitizer bath, I literally keep a sponge and dawn under the sink for the glasses I use. It helps that my boss pays me well, and treats me great. I'm literally the only one who does this tho, so if you go out to eat, ask for me as your server 😉.

The difficulty between management and employees when the machine breaks down.Managers have to shut it down and switch to hand washing, employees wouldn’t have the time, some would run the machine cold and empty of detergent. Once there was more dirty dishes than clean, ended up with more people in the dish room than the floor backing up service. Don’t dare spent any overtime though, management isn’t paying for that

It's actually a bit misleading to say there were billions of bacteria on the dishes and silverware. If there were that many, they would have been visible to the eye. The billions were cultured in the lab from the samples. Bacteria multiply at an exponential rate, so you only need a few to end up with that result after the incubation period.

This is the exact reason why a health inspector would tell you to put your silverware in a glass of hot water at a restaurant. I remember one time I received stained silverware and I asked the waitress for a glass of hot water and another set of silverware she looked at me like I had two heads.

Someone doesn’t understand how bacteria work if you really think a napkin is going to do much. Especially if those napkins aren’t completely steralized themselves. (Which having steralized napkins is a ridiculous idea to begin with, they would get contaminated in no time)

The main problems (just a guess) is server’s not washing their hands or touching random dirty things before they handle plates and cutlery.

I have to say on this that, when I go out shopping and have to visit the ladies room I do notice a lot of women who leave the ladies room have NOT washed their hands! And yes! Some of those ladies work selling food.

I will say , I worked at Olive Garden 2011. We were told my DMO that we shouldn’t be putting dishes back through unless we absolutely couldn’t pick off whatever was stuck . We wrapped silverware without gloves & in the janitor closet sooooooo, I can say first hand it’s nasty af lol

I worked in resturaunts along time ago and what most people don't know is that many of the employees dig and scratch in their private parts without washing their hands. I see it from servers to managers.
If all the restaurant employees wash their hands every time before they touch those plates or utensils that should definitely prevent any bacteria.

In country like Japan, there is actually a long ongoing trend that people there bring their own eating utensils when they go out to a casual dining restaurants or other eateries.
