Eggplant is delicious roasted in the oven. You can add other vegetables, like sweet potatoes, carrots, onions, sweet peppers, and any other vegetables you like. Cut them into chunks, coat with olive oil, and season to your liking. Serve over rice, couscous, or pasta. I've also added eggplant to lasagne. You remind me of a lady I once worked with in times past. Her name was Savanna. Thanks for all you do to inspire and help others. Peace and blessings ❤

I love egg plants, though I use them for making meat stews. They thicken the gravy. I a happy to learn that I can also fry them and eat them as snacks. Thanks so much

In Africa especially in the village, women are expected to dress descent and not exposing their body with tight pants. Is it possible that although you wear tight trousers, you can have long blouses that cover your thighs. I'm not judging, just appreciating our African culture and refusing to go the way of the West.
