I live in the American South and it gets quite hot in the summer- so I like the custard pie cold and served with fresh berries.
If anyone else doesn’t have a deep pan, I used the following quantities for the filling: - 7 egg yolks - 60g sugar (25g in the cream, 35g in the eggs) - 400g double cream My tin is 9” wide and just under 1.5” deep. Hope this helps!
A little tip for you guys . ( its for all tarts which use a custard , And i think a lot of you already know ) When you pour the custard to the tart shell , sieve it to the tart. that way you can get rid of any lumps in your custard .

We call this "melktert" (English milk tart) in South Africa and the recipe I use adds a bit of cornstarch and flour to the milk and butter mixture and then you don't bake it. It is also a little lighter. And we sprinkle cinnamon on top!
