So, the authentic touch/flavor of Punjabi home cooking/now evolved into richer dhaba styles, will be present. I had tasted a fantastic version of gajar halwa at the home of very prominent Sikh judge in Chandigarh. It was served warm in bowls, topped by slivers of home-made GUAVA JAM [not jelly, please!] with warm light cream poured arond the sides of the bowl. The gajar halwa here should not be cloyingly rich or sweet for this combination to hit the spot. Again, in a cold, rainy land, a warm to just more than warm dessert will fit right in, just as warm/hot gulab jamin served with rose or pistachio ice cream. Iranian pistachios, please.
