    I randomly developed an allergy to fish a while back so I can't eat the stuff, but I'm still going to watch this because you guys are awesome.

      @@EmilyDuncan Ooh thanks for the tip, that sounds like it would be good. At least I can still eat shrimp and lobster though, I'd be salty if I couldn't lol

    The ceviche looked mouthwatering. How long did Chef Saul cook the octopus?

      I actually cooked the octopus! This one took about 40 minutes, and just boiling it in salted water was perfect to get it ready for this preparation 😋 generally how long you need to cook it will depend on the thickness of the meat, so you should check it with a fork for tenderness starting around the 30 minute mark (could take up to 45/50 min)

    Yay! Emily and Saùl, minus the formality of an epicurious video (not throwing shade, to clarify). I'm tempted to make this for my husband. I'm not huge on seafood while I'm pregnant, due to my insane sense of smell, but he loves the stuff.

We love doing Epicurious, but it’s also great to get to chat and hang out a little more 😄 Chef Saúl’s corn recipe (also on this channel) is delicious and contains no seafood (there’s beer but you cook off the alcohol/can swap for NA beer if you want to be extra cautious) if that’d be easier on you!

    First ceviche I ever had was in Costa Rica.
    It was more like a Peruvian dish but man it was so refreshing and delicious on a hot day.

    In my Seattle area farmers markets, my favorite source of peppers (and eggplant, and sweet corn) is the Alvarez Family Farms. I have learned that when I ask the guys behind the tables about the heat levels of the pepper varieties on display, I have to make a mental adjustment from "mild for THEM" to "mild for ME".

      Hahah an important distinction for sure!! This was pretty mild, adding a few serranos would make it much less so 😂
