Coconut Pandan Sponge Cake Cupcakes w/coconut cream filling

  • Enjoy this delicious cupcake recipe flavored with pandan. The coconut cream filling is a delicious addition to this cupcake.

    CAKE BATTER
    Mixture 1: Meringue
    5 egg whites
    1/2 cup granulated sugar
    Mixture 2:
    5 egg yolks
    1/2 cup granulated sugar
    1/3 cup coconut milk/cream
    1/4 cup vegetable oil
    1/2 tsp vanilla extract (optional)
    1 1/2 tsp Pandan flavoring
    1 cup cake flour
    1 tsp baking powder
    Pinch of salt
    COCONUT CREAM FILLING
    1 cup cold heavy whipping cream
    3/4 cup coconut cream/milk
    1 tsp coconut flavoring
    1/4 cup powdered sugar
    1 packet dry vanilla pudding mix 3.4 oz
    WHIPPED CREAM FROSTING
    2 cups non diary ready to whip topping

    You can make cake flour at home guys! Just need all-purpose flour and a tiny bit of cornstarch. RUclips search “how to make cake flour”. You just mix the 2 ingredients and sift 5 times. That’s it!!! No need to run to the store if you have these 2 ingredients!

    Hi zoey! I just made this today and it came out delicious! When I took the cupcakes out of the oven they looked perfect. But when I took them out to cool, it developed a sticky wet feeling on the top of them? Did I do something wrong? Is there a way I can avoid that?
    Im planning to make them for my sons birthday. If I make them the day before, do you think I should put them in the fridge then frost them in the morning?

      Hi, try baking for another 1-2 minutes next time. This may help prevent the sticky top.
      If your baking day prior place the cupcakes in a tight container. You can place the container of cupcakes in the refrigerator or leave it out in the kitchen (I assume weather in your area is not too hot during this time.)

      Hi, yes you can. Just make sure to keep them in a close container in the refrigerator.

    Also does the pastry pride ready to whip cream topping hold up in the heat? Or do you think it's better to use your whipped cream stabilized with instant pudding mix ?

      The pastry pride will hold better in the heat than my whipped cream recipe.

    Hi Zoey. I baked these again yesterday and it deflated. Any tips on how to keep it from deflating?

      Hi, the cupcakes usually shrink very little in size as it cool but should not deflate. If yours did you may have over-mixed your batter. Other reasons could be ur heat distribution source and if you opened your oven door during baking.

      Is this for the whipped cream? I’ve never used meringue powder so I’m not sure. Sorry.

    Hi,
    I love your recipe but I’m having some issues. When I’m folding in the egg whites into the batter it is already airy with air bubbles and and I feel like I just started folding it. the top of my cake-cupcake is sticky but my toothpick comes out clean. The top is not fully dry and gets sticky. Do you know what I’m doing wrong?

      Hi, sounds like you may need to bake the cupcakes another few seconds to minute longer or adjust your temperature a little higher towards the end of baking.

      Hi, I don’t recommend freezing sponge cakes due to outcome can result in a stiff cake.

    How long would i need to bake if for if I use a rectangle cake pan ?

      Hi, I’m not sure on exact time but try 23-30 minutes. Check using toothpick.

    What is 1 cup cake flour in grams, also i see u use on your ube cupcakes video 1 cup +2Tablespoon cake flour, how many grams is that also thank u

      Hi, sorry I didn’t measure in grams for the cake recipes so I don’t have the measurements. Whenever I make again and remember to measure in grams I’ll update the recipe. It’s 1 cup for the cake/cupcake recipe unless you’re making the ube recipe it calls for extra tablespoons.

    I did the coconut cream filling the first time and it was perfect. However, I had been trying to do it again multiple times and it did not work. The filling was liquidity and would not thicken up, no matter how long I beat it up. Am I doing something wrong??

    Will I be able to use this recipe to make a panda sponge cake? Will the pandan whipped cream with coconut be stable enough to pipe and used for the whole cake? Thank you.

      Hi, yes this recipe can be use to make a cake. For large cake you’ll need to double the recipe. The whipped cream is stable to use. The coconut recipe is for the filling.

      Yes that could be the reason. Next time if you didn’t you can turn your cupcake upside down after baking.

    In this recipe you used a whole box of vanilla pudding but in your vanilla sponge one you only used 1tbs? Could you tell me why? Also, I tried to add food coloring to it and it didn’t change colors to the frosting. What am I doing wrong?

      Hi, the whole box of vanilla pudding was added to the recipe for making the coconut filling. This tutorial I used a ready to whip frosting, I did not make the frosting from scratch. You may need to add more food coloring, it should change color depending on amount added. Try gel food coloring if liquid is not successful.

      You may have over-mixed when adding the meringue. Was the batter runny? Did the cake rise well? Yes you can add less sugar.

      @@ZoeyandVFam maybe I over mixed my meringue then. The white egg do not frothy and Heavy. It’s a little liquid.

      Your meringue should be at a stiff peak like in the video. If you turn your bowl upside down the meringue should not fall from bowl. Hope that makes sense.

      Yes it’s fine, it’ll still taste great just with less of a coconut smell. You’ll still get a coconut kick from the coconut milk just not as strong.
