Ube is a purple yam from the Philippines, and it's tough to find real Ube here in the U.S.
Luckily, this recipe only requires Ube extract. I provided the link to the Ube extract below - you MUST use that brand!
I've tried using other Ube extracts to flavor these Ube cookies, but to make them the best, you gotta use this specific extract.

Just made these with both ube and pandan extract, and added white chocolate chips like the comments recommended. They taste amazing and look exactly like the ones in this video, and my roommates loved them 😊

I tried making these cookies a few times. I even bought a kitchen scale to make sure I followed the recipe to a T. My first 2 batches, the cookies didn’t spread at all & were more biscuit like. The last time I just made it, the cookies spread a bit, but not that much really. The texture is just ok. Not sure what I’m doing wrong. I’ve made plenty of cookies from scratch with no problem, but these cookies just don’t seem to not like me. 😂 I love ube & coconut, so I really wanted these to work out but not sure what else to do at this point 😢

These are delicious! I’ve made 3 batches in the last 2 weeks. Everyone that’s tried them said good things too. They are so soft, buttery and when fresh, slightly crisp on the outside. Amazing
How do you store them? Can u leave them out wrapped or in the freezer
@@destinyagnew5080 I put them in plastic Tupperware and leave them out at room temp. Pop ‘em in the microwave for 10 seconds to get them warm. I’m sure you could freeze them fine.
Just made these. I only had brown sugar. Didn’t have coconut but I’ll use all that next time... I will add white chocolate next time. Soooo delicious!!! I’m not surprised I had the ube extract on hand 😂

I just tried your recipe and turned out good except mine didn’t poof up as big as yours so I flattened it while still baking. I also added 1 tsp ube powder. That was my first try so maybe 2nd time it’ll be bigger

You can!!! I made these for the first time with cup 4 cup brand gluten free flour and they turned out amazing. Another brand I recommend for cookies is king arthur measure for measure gluten free flour :)
Apparently ube is trending, but since we don't really have it in the US, people that don't know what it looks like go into stores and ask for it but are really looking for purple sweet potato (I guess preferred look?). I found this little snippet that was interesting:
Also known as a purple yam, fresh ube has brown, bark-like skin, and flesh that ranges from white with purple specks to lilac. This tuber is a staple of the Filipino kitchen. It is well loved all over Asia as a dessert ingredient for its sweet and nutty flavor. However, in most cases, ube desserts are made with either grated frozen roots, powder, flavor extract, or jam (ube halaya), which are all available in Filipino or Asian markets.
Purple sweet potatoes, however, are more commonly available to most consumers. Purple sweet potatoes have purple-tinted skin and violet-purple flesh; Okinawan sweet potatoes have beige skin and lavender-purple flesh.

Hmm you can keep it the way it is - it will just spread a teeensy bit more but shouldn't be a problem because I've tried them before without the coconut :)

Tried baking these, they were delicious but - not sure the desired doneness. At the 12 minute mark they were pretty raw in the center and top - is that the ideal cookie or do you bake em till they become cakier?

Definitely measure by weight, at least the flour. My cookies were super crumbly most likely due to too much flour 😭😭
