    Ingredients:
    Crust
    - 1 sleeve (130g) graham crackers (swap GF crackers to make this whole recipe gluten free!)
    - 4 T melted butter
    - 2 T granulated sugar (more of less depending on how sweet you like it)
    - Pinch salt
    Filling
    - 16 oz cream cheese (that’s 2 blocks where I live)
    - ½ C powdered sugar
    - 1 T lemon juice
    - 1 T vanilla extract
    - 2T sour cream or yogurt
    - 4 T heavy cream, cold from the fridge, whipped to stiff peaks
    Method
    1. Crush graham crackers into crumbs and get your aggression out. then combine with the rest of the crust ingredients in a medium bowl. Mix until wet sand texture has been achieved. Drop into muffin tin lined with paper liners and flatten with the bottom of a glass or spoon.
    2. Place prepared muffin tin in the freezer.
    3. Mix all filling ingredients except cream until smooth and lightened in color.
    4. Whip cream to stiff peaks.
    5. Fold cream into cream cheese mixture.
    6. Drop by rounded spoonful into prepared muffin cups, smoothing with an offset spatula or a knife.
    7. Refrigerate for 2 hours minimum. Note that you can eat these right away if you’d like but you’ll need a plate 😊
    8. Top cooled cheesecakes with your favorite topping: jam, jelly, Nutella, melted chocolate, peanut butter, diced fruit … or even eat them plain!
