    You look nice today Vivi, nice summery top too.
    I always poke my tomatoes before cooking and all the skins loosen up.
    Helpful Hint#1: When doing blanching or boiling vegt. I always use the leftover water. With tomatoes I don't freeze the juice and seeds just the pulp. After I have the water, seeds and juice I make something with it like Spanish rice. This saves freezer space.
    Hint#2: If you don't want to buy all of those plastic freezer containers, pop a plastic bag into the container before filling, after its frozen, take out the bag with your 1 serving and seal it and reuse the clean container for your next batch.

      The boxes are all scrounged/recycled ....... mostly out of the nurses staff room! ;-)

    That's a great book, I've been crazy canning,pressure canning,dehydrating. The tomatoes and bell peppers are harvesting every other day and I've put something in the pantry each day. Today was more BlackBerry jam and spiced tomato soup, tomorrow will be pickles! Happy preserving our bountiful blessed harvest! Have a great evening!

    Even your tomatoes don't make me long for winter Vivi.
    I'm loving my carrot puree at the moment. Every piece of veg on my plate tonight was home grown. It felt GREAT! 💋

    Instead of spending money on a water bath canner you can use a large stock pot with a trivet at the bottom, Not got a trivet use a thick clean dishcloth or tea towel

    I live an hour north of the Ball Family that made the first Ball canning jars as we call them in the USA.The Ball Family lived in Muncie Indiana, an hour or so north of Indianapolis. Any Ball canning book is excellent. They are trusted with good recipes and canning instructions. I like to can/bottle salsa from my home grown tomatoes. If I can tomatoes I like to cook them down first. Good video Vivi, and you bottle just like we do :-).

    Just wondered how to preserve any excess tomatoes so not to waste any. I’ve searched your site today Vivi and just knew you would give me a good method so, thank you. I don’t have much freezer space , but this is FAR cheaper than bottling , and if I eat them quickly they won’t stay in the freezer for long! Thanks again.

    Very good plan not to video bottling. Each person needs to take responsibility for getting that risky process sorted for themselves. Researching is part of the fun anyway. Lovely video as always.

    You look so pretty today Vivi! I love canning tomatoes! I use plum tomatoes and can them whole and plain so I can use them many ways as well. Yes we have Mason, Ball and another brand called Kerr. I've used all three brands with great success over the past 20 years. Your Kilner jars are cute. Love the little label area on the front of the jar. Your bird apron is the sweetest! :-) Take care, Gabby

    You have inspired me Vivi! Spent today freezing zucchini chunks & tomato soup for the winter. Never done anything like this before and I'm 52, but I had more than I could eat fresh so I thought I would give it a try. Thanks for your lovely videos!

    I'm catching up on past videos and saw this one which interested me. I remember my aunt preparing tomatoes like this, but she used to cut the skins first... I don't suppose it makes a blind bit of difference either way, as long as you get the tomatoes out of their skins 😂🍅😂🍅😂🍅😂🍅 happy harvesting, hope you get a fantastic yield 👍🍅👍🍅👍

    two hints on blanching, we always nick or cut a cross on the blossom end of the tomato before blanching for the min and then plunge into the ice water. I also invested in a skimmer to lift the tomatoes out instead of draining, that saves the energy of reheating water even the small amount and saves you arms. LoL

    Dehydrate. Tomatoes take up less room and skins plus pulp make a great base for everything. I can get a ton of tomatoes in a quart jar. I'm starting to dehydrate grape leaves, pea leaves and herbs. For soups and smoothies later. I lay the leaves out and let them air dry. But you can dehydrate just about anything and they take up much less space than canning which I still do.

      Belinda Charpentier I agree. Love my dehydrated tomatoes in winter. It's a great chip substitute, late night snack.

      Yes, what do you use dried grape leaves in? I only use them stuffed with rice but I use them fresh.
      I heard they are healthy for you.

    Mate when spinning your food mill, every 5th turn, do two reverse turns. Also blanch before milling too if you haven't! :) Just a tip.

    I store my pressure canner in my water bath canner when not in use! I also use tattler canning lids which are reuseable

    great video vivi you need a food mill then you dont have that 1 extra step of putting then in the blender it gets all the seeds and skin off of them love mine

      All you got to do is blanche your tomatoes first, strain them and then process them thru the food mill. I'm lucky, I have a KitchenAid stand mixer and I bought the Strainer attachment a few year's back and it was sooo worth the money! I bottle about 30 1liter jars and 30 500ml jars of tomato sauce and whole tomatoes every year. So worth the trouble! :)

      If it is anything similar to the Victorio Food Mill do be sure to watch the videos of how to best use it. I have a 'knock off' and nearly ruined my dear food mill today by not following instructions whilst processing blackcurrant berries that had already been steam-juiced. I'm happy to report that my food mill did survive the mishap even though my hands are now well and truly blue-stained.

    Skins slip off if you just freeze then when you defrost tada! You can also dry the skin and grind for tomato powder

    Check your canning book again! I believe that if your fruit (in this case, tomatoes) is hot and your jars are sterilized and still hot, your boiling water bath needs to be just 10 minutes... NOT 2 HOURS!!! Also, many nutrients are in the skins. Try just whizzing skins and all in the blender. I used to remove skins, but now I blend skins and all if I roast tomatoes to freeze. If I cook tomatoes on top of the stove to make sauce to bottle, I cook them down WITH the skins on and put it all through the food mill to make sauce. Re: your issue with the food mill- cook the tomatoes first! Then you might have to give your little tomatoes a chop so they don't just roll. Also, turn the handle 3 or 4 times one direction, then a couple of times the opposite way 'round. This will mix them up better and scrape the bottom clean of smashed skins and seeds.

      I also blend the tomatoes with skins, never had an issue with bits of skin left afterwards, I did it that way simply I didn't have time to peel the skins. Might be worth trialling it out and see ;)

    How big is your freezer? Is it under your countertop? It would be fun to see how you pack all your lovely frozen veggies into it.
    My tomatoes are all still green - I got them in late. Fingers crossed I have some to store!

      Under counter freezer......and it's jam packed......but I eat from it regularly to make room for the next crop. I have masses of green toms too - just hoping for some more sunshine now to help the,m ripen......

    Soups are my favorite Vivi! I could eat soup on the hottest summer day with the a/c on of corse...lol! I was going to make a canning video myself but I didn't for the exact reason you didn't. I've never had any problems when it comes to canning tomatoes. But didn't want to put out a video and then something go wrong on their end. You have a great idea for freezing your toms. ✌🏼️❤️&🍅

    In the USA we have Mason Jars, Kerr Jars, and Ball jars. The lids, as far as I know, are interchangeable for the different sizes but the seal top might not be reusable. I'm not sure why they are not also sold with kits to add new seals on the lids.

    funny about the food mill practice need. I have one too and have yet to use it b/c I was slightly intimidated. I'd like to use it to get seeds out of blackberries but wondering if 1. i can manage it the first time and 2. I can deal with the mess quickly that it makes. If you learn anything , pass it on!

    Aren't there blight-free varieties of tomatoes for the UK or are you trying to stay away from hybrids? Love your videos, Vivi. What surgery are you facing?

      No blight free......only blight resistant and they're all weirdo hybrids....... Yes, I stay clear of F1s and hybrids. :-)

    Use sodium bicarb and water on the soil to prevent blight I use it every year 3tsp per 1 litre of water 👍 hope this helps

      I usually spray it on leaves if they get a little wilty and yellow. But mostly I just start removing lower leaves.

    How wide and how deep is the water bath canner please Vivi? May go for a stock pot but will take a tape measure with me to find a similar size to a water bath! Dying to have a go at canning some of our apples this year. Invested in the Ball Blue Book recently. Keen to get creative and productive. Always look forward to your vids! 🌺

      wildchild554, look for this book: Putting Food By, by Hertzberg, Vaughan, and Greene. It has been my food preservation bible for years. It is often updated.... I need a newer edition! But I have followed their guidelines and recipes and never had a problem. I'm in the US.

      grind in a pepper mill to make powder .Soup sauce so rich . Even 🍅 tomatoes .

      I am guessing that for soup, one mixes equal amounts of powder and water. Less water to make a sauce? I read the powder is good to sprinkle on salads and veggies too. Always looking for flavor!

    Mason Jars and Ball Jars are the same things:
    Mason after John Mason who was the first one to Patent them in N America...
    Ball after the Ball Corporation which is currently the producer of them in N America.

      I do the same thing- I think maybe I take the lazy route. But years ago when I did skin mine, I then took the skins and dried them on a cookie rack until completely dry. Then blitzed those to a power and it was an awesome little tomato powder to add to soups. If you have skins- it's a fun way to use them up. XOKK
