I highly recommend you to watch opening 20 version 3 especially if you liked Sanji character (your blond guy). The one you saw on the other video was version 1, and although the first 50 seconds are the same, the rest of the video is super sad, I'm sure you would love it.
And you also get to see a little bit more of Sanji's fighting style.
There is a point when catching up on One Piece where you go from "Wow, there's way too much One Piece" to "Wow, there's not enough enough One Piece". You felt a taste of that when you hit the point where you said "That's it? That was 1000?" But if you commit to watching that you'll find a day where you feel that for real.

The Dressrosa arc was kinda gory and dark.
I think Marineford Arc (Paramount War) was more dark and more brutal. And It was the peak moment of the story at that time.

but the begining part of the series is more fast pace.

And around Alabasta Arc+ is where peak starts
Also there is one arc you might find boring (Skypia Arc) but this arc later on will be so important to the series.
