What is good work fellers on smoked prime rib. You might be surprised how many folks don't know that a prime rib rack is a bone-in ribeye rack just cooked differently, you fellers surely know, I know, but I see a lot of folks ask what part/cut of the cow does the prime rib come from.
Retail and restaurants use the term Prime to make it sound better.. fact is American beef is only about 2-5% certified Prime.. Nonetheless, Choice cut is very tender..
I always stock up this time a year on the " standing rib roast " at 5 dollars a pound. You can't beat it . I cut some into my steaks. , shave some for cheese steaks. Cut some smaller for roasts. And leave a couple as is. Depending on how big I get it. I use food saver . Lasts me all year.
Yes grocer sells tppto bottom prime , choice , select I ibuy choice , prime to costly & select not that good & needs to be marinated to eat for me
@bbqpitboys yes , Tinley even call select grade prime rib. My point was prime rib & ribeyes are the same bone in loin , they are the same cut of beef , just cooked differently, ribeyes are separated & cut into steaks on the grill , prime rib is roasted with the whole loin

Holy cow, all those wires into the smoker looked like an advanced "Science Project."
We smoked about 70lbs of meat and fish at once, so we heat monitored several roasts, and ribs to keep track..

You know I am on a seefood diet right ? I eat all the food I see. But the rib looks good so better slice it all up not a slice or two
What was the internal temp on that monster?
If medium rare like most are it is 125 degrees F , that is how I eat mine
We removed it from the smoker @ about 125f, and let it rest for 20 minutes .. figure 135f internal
