You need to know that "Kenkey" and "Banku", made from sour corn meal, were introduced to Ghana by the Gas/GaDangmes. The word "Kenkey" comes from the sour taste as it's introduced into the oral cavity. "Shitor"= a Ga word, means "pepper" Also, an origination of the Gas/GaDangmes. There's fresh pepper (red or green pepper with fresh onions, tomatoes, salt to taste), and fried pepper which is usually called "black or "Shitor Din". The Shitor Din originated as a fried preservative among the Gas/GaDangmes, aside from the inclusion of fresh tomatoes, onions, ginger and/or various types of peppers (both fresh/dried), - It usually contains dried ground baked shrimps, fish, etc, etc... as a source of protein during times of scarcity. of scarcity.
My dear, you forgot to ask them about the mixing ratio ( the cooked and the uncooked portions. Some people are saying, 2 cooked for 4 uncooked. I want to know the right mixture and order to get the best moistened kenkey. My one always comes out a bit hard.😢❤❤❤
Tatiana, I love u! Thx for showing us the process of how to make the foods we eat and enjoy. It gives me a deeper appreciation when I just go to the market and select my kenkey with ease. #givethanks 🙌🏽🤎
