    My biggest regret is that I never made dong chi mi with my maternal grandmother. I will never stop missing her dong chi mi and her other fabulous side dishes. I loved them so much and the prettiest sight I ever saw happened when I was with my grandmother and I saw it when she opened that lid. I wish my grandmother had lived past 100. I would have been absolutely elated to spend a lot of time with her. Funny how my mother is nothing like her. Not when it comes to housekeeping and homemade dong chi mi. My mother's dong chi mi is awful.

      Maybe it's not your mom's dongchimi is awful.. but your grandmother's was way too delicious... hehe I'm glad to hear you have a great memory with your mom and grandmother's korean food. Thanks for sharing the story with me. :)

    I am a korean, my mother makes without pear or any fruits but my mother in law makes with pear or apple.
    I preper my mother's kimch I think water kimch with fruits has smell but water kimch without fruits is more like fresh.
    And my mom doesn't use any sugar.

    시원하고 맛나보인다. 양이 나한테는 많아보이는데 반만 먼저 담아봐야겠는데 무우가 없네 ㅎㅎ 한국수퍼다녀와서 만들어볼꺼데 나는 고추에 구명몇개 만들어서...예전에 울엄마가 담으신 공치미에 삶은 밥 고구마 먹구싶다. 겨울이 오니까 먹구싶은것도 달라지지?!

    Happy early merry Christmas to you and your family. I enjoy the video once again it is something I never seen before. did you grow up making these recipe or did you have to learn how to make them from a cookbook or cooking school? 😇

      Yes, my mom always made delicious kimchi.. ;) I never went to a cooking school.. if I knew that I would do what I'm doing now before..     Hi..I really love your all recipes.. problem is I couldn't find sea salt or kosher salt..can I make this using table salt?

      yes you can use table salt..but only problem is...the saltiness between them can be different... so you need to adjust the amount of salt you use for this recipe..

    Thank youuuu for the Bible verse at the end!! 😃😃😃😃😃😃😃😃 p.s. Aeri, if you add the sweet rice flour porridge with onions and pear like some other kimchi recipes, does it change the flavor or end product of this dongchimi kimchi?

      It can be good for flavorwise... but one problem is... since you ground those ingredients.. onion and pear.... your kimchi broth can be not as clear as mine... that's why I put chunks of those ingredients in my water kimchi... it gives the flavor to the kimchi broth..but it will still keep the clear broth.. it's up to you. :) Thanks

    아신안 수퍼에가서 무우하고 고추사왔지. 주말 지나면 동치미담아서 국수말아 먹어야지. 배추김치는 어제밥에 담아서 오늘 냉장고에넣기전에 맛보니 따봉 이더라.

      우와.. 새김치에.. 동치미... 최곱니다. 저는 올여름 한국에 가면 친정 엄마에게 김치 비법좀 전수 받고 오려구요. 저희 엄마가 정말 김치를 맛있게 담그시는데.. 엄마의 그 맛이 안나네요. 제가 만들면.. ㅎㅎㅎ

      김치만드는게 진짜 어려운건 아닌데 예전 엄마맛을 따라가는건 쉽지않더라. 은근히 신나서 밥잠 설치는건 아니겠지? 바라볼수있는 좋은날이어서 나도 기분이 좋아지내!!

    Can the asian pear be replaced with normal pear?

      I will say.. just sweet apple can be closer than normal pear if you want to replace..

      I am a korean.
      My mother always have made water kimch without any fruit and sugar.
      I love my mother's kimch more than any other kimch with fruit. The water kimchi witjout fruit tastes fresh taste.

    What dose a Asian pear taste like? I have never seen one before

      It tastes a little similar with crunch normal American pear (before it becomes soft) but Asian pear suppose to be crispy and crunch to eat (not soft) and it is a lot juicier and sweeter than normal American pear.

      So juicy. It is a crisp and firm fruit, but the amount of juice in each bit is a little mind-blowing. In a good way!

      I m a korean. I prefer not to put sugar in dongchimi. Just think of it as salt water×radishes. Thats it. Dont have fruites like pears? Just skip those. Salt water×radish.. That s it. the mother nature will take care of the rest.

      It tastes the best with Korean radish..but yes.. you can still try normal radish too..

      It takes about 3 weeks to ferment this water kimchi.. once you start to eat you can eat as long as you want to eat.. for months.. (only problem is.. it becomes sour and sour by time goes.. so I like to finish eating it in a month after I started to eat it .. )thanks

    Im a korean.only koreans eating dongchi mi is like a sin. Just try it espeacially in winter. Your life Will be salvaged and relieved by it. You can trust me.
