Korean NON SPICY Water Kimchi Recipe!

    ▶Korean Water Kimchi Recipe! | Mulkimchi
    Ingredients:
    3 small nappa cabbages (albaechu) or 1 large nappa cabbage
    1 radish,
    half carrot
    2 onions
    1 pear
    1 apple
    5 red peppers
    1 or 2 handfuls of minari, water parsley (optional)
    1 handful of green onions
    4 T of salt
    1 cup of sea salt
    2T of sugar
    2T salted shrimp or fish sauce
    a bit of ginger
    10 cloves of garlic
    some flour paste
    5 liters of bottled water
    ▶Korean Water Kimchi | Mulkimchi
    Step 1: Prepare Ingredients
    Use 3 small nappa cabbages. Cut off the root of the nappa cabbage. Cut it into bite sized pieces. Cut the radish into 2 centimeters thick. And cut it into 2-centimeter sizes again. And cut it thinly. Brine for about an hour. After 1 hour, wash it once in water.
    Step 2: Making Flour Paste
    Put 3 tablespoons of flour in a pot. Add 500 ml of water. Mix the flour and water well. Turn on the heat and boil over high heat. When it starts to boil, boil it for 2 more minutes over medium high heat.
    Step 3: Chop the vegetables
    Slice the carrots into thin pieces again. Slice the red pepper thinly. Cut the washed green onions. Cut the dropwort (minari) into 2 to 3 centimeters. Cut half the onion finely.
    step 4: Making water kimchi broth
    Cut the pear, apple, radish, and onion into chunks. Put the chunks in a blender. Add some ginger and garlic. Pour 3 cups of water. Add 2T of salted shrimp. Grind finely. Pour the finely ground ingredients into the strainer and filter it. Pour the flour paste. Pour 5 liters of water. Add 3T of salt and 2T of sugar. Add the chopped vegetables, washed cabbage and radish. And mix well.

    I love mul kimchi SO much. I worked in South Korea many years ago and my boss used to always make me homemade kimbap and mul kimchi. It was delicious! ❤️

    요즘 날씨가 점점 무더워지니 물김치가 시원하고 맛나지요. 알록달록 예쁜 색감과 아삭거리는 채소들의 식감이 입맛을 돋궈줄것 같아요. 시원한 물김치 잘 봤어요~^^

    밥 먹을때 물김치만 있으면 국은 없어도 됩니다

    I see that everybody peels or apples and pears but I’m unsure why. It seems like the peel would be good also to eat. And it’s not like it’s too crunchy. It’s not like it has too much pectin and you’d end up with kimchi jelly :-). Gosh kimchi jelly sounds really good🎉.

      Technically I also use the peel and grind it as it has good health supplements. However, if you'd like, you can also use the peel according to your preference. Good luck!

    Any possibility to make this recipe without a blender? I would really like to make it but i don't have a blender

      If you add minced garlic and ginger, the kimchi soup will not be clear, so you can slice it thinly and add it. You can also slice a pear thinly and use it. You only need to add salted shrimp broth, and if you don't have salted shrimp, you can just season with salt. Hope this way works for you. Thank you for the good question! 🥰🥰

      Water kimchi is a type of fermented food, which means it can be stored in the fridge for a while. However, as it keeps fermenting, it might get sourer. It's best to eat it within a month after making it to enjoy its best taste. Thanks for your question!

      @@ItsMamakLee Yes, napa cabbage kimchi can be stored in the refrigerator for a long time. Even when it ferments and becomes sour, it can be eaten in many ways. However, for water kimchi, the taste declines if it becomes too sour. Thank you.😊

    Does this kimchi have probiotics?

      Yes! Mulkimchi (water kimchi) also starts to ferment 2-3 days after being stored in the refrigerator. The temperature and ingredients can cause some variation. Even when stored in the refrigerator, mulkimchi continues to ferment, producing a lot of healthy lactic acid bacteria (probiotics) during the fermentation process. Thanks for the good question!😊🙏
