感谢大师傅这些年的无私付出。请问,牛肉可不可以做这嘎菜式呢?
可以,东北有回民馆子用牛肉做的,但牛肉容易老,您要找嫩的部位并且用碱水之类的浸泡制嫩才行,因为这个菜家里做要炸一阵子,否则糊不够酥脆,但这容易让里面的肉有点老。

我感觉中国厨子还生活在上世纪80年代,动不动就是硬菜,各种过油。这种东西十几年前我们就不吃了,哪个讲究点生活品质的还成天大鱼大肉,跟刚结束逃难似的。

这个他以前有提过,家里的锅和火因为不大,所以油温需要稍高,火也需要是大火来保持温度
