I would be mixing the crumb mix with Parmesan too. I would find it too dry and would probably stir in a bit of yoghurt with the mushrooms to make a creamy sauce.... you're right, we all have our little tweaks. I can't eat cooked celery for similar reasons you can't eat onions...
@@grumpy_poo oddly, it wasn’t really dry - thanks to the butter, I think. But a creamy sauce would be nice, as long as there wasn’t too much liquid, I think. If you try it, let me know how it turns out!
To make it vegan you could try adding an egg alternative eg a flax egg which is 1tbs ground flax seed to 3tbs of water, left for a while to thicken, or similar using ground chia seeds, or I sometimes add a dollop of tahini.
I dug out my Cranks book last night and added 1tbs flax and 3tbs soya milk to the crumble for my version and a similar quantity of cheese sauce to my husband's. It worked well to hold the cooked mixture together. I didn't have any nuts so used seeded wraps instead of bread and a bag of cooked chestnuts. I threw in some peppers with the mushrooms and used up spring onions instead of onion. Had it with gravy, boiled potatoes and sweetcorn, it was delicious. Thank you for reminding me I had this book, I'm trying the red bean and aubergine stew and homity pie this week too (also enjoyed the mushroom stroganoff last week) 😊
Delighted to see someone else subbing celery in for onions since onions don't agree with the belly. Garlic doesn't agree either so I sub in a little garlic infused oil instead.

@@ksully6551 I’m ok with a little garlic but I’m the same with infused oil - it’s not the onion or garlic essence that’s the issue, just the flesh
