The chicken leg quarters are actually the thigh combined with the leg. . But actually if you keep them attached like that, it holds in more moisture and it's more tender that way.
Everyone should try fried okra. Especially if there is a little corn meal in the batter for crunch and sweetness. Really unique taste and texture. Okra originated in East Africa and the slave trade brought it to North America. Really, really ancient crop.
Good evening y'all. I hope you're well! In Arkansas the bologna would have been Petit Jean brand. Sliced the thickness of a hamburger patty then fried crispy on a flat top grill. Place between two pieces of bread or Texas toast that were grilled again and it would be a bologna sandwich. Arkansas State sandwich. You can add anything from cheese, pickles, onions... just like a burger. ❤

It has the Arkansas River on one side and then the port of pine bluff on the other. Near regional Park. I have an aunt and uncle that live in Whitehall.
Kings is my favorite BBQ spot! If you go again get the kings loaded potato with chopped brisket .. don't forget to cover in your fave sauce... Absolutely epic

I would choose Kings. Also, I’m not a big bologna fan. But I will eat it once in awhile, but when I do, I like it fried. Almost burnt to a crisp. 😂. I love your videos ❤
George's used to be great. I believe they changed cooks. Kings closed for a while. The original owner used to make his own pastrami. It was off the hook. The new owners are great cooks. I drive by it every day to go to work. I usually stop on Tuesday for Tacos on the way home

I've never seen anyone in Oklahoma eat BBQ dry, without the BBQ sauce. Oklahoma BBQ sauce is like Kansas City BBQ sauce, which is sweet and smoky. The first BBQ I tried when I was a child, was the bologna and it was served with the sauce already on it and was thick-cut bologna. My mother made greens from polk-greens and put a little vinegar and bacon grease in it. Okra is delicious if done right! King's looked the best out of the two places.
From oklahoma and I hardly ever eat it with sauce if it is smoked well enough. and if I do its just a little bit of sauce. No reason to ruin good bbq with too much sauce. but if it's bad bbq then it probably needs it.

If you are going to do Oklahoma BBQ, you need to hit up Bedlam BBQ in Oklahoma City. They hold a patent on a very special blend of tea to add to it. Then there is The Butcher Stand in Wellston Oklahoma. Get there for the opening speech as they start their day and the corn on the cob is something completely special. But their meats are some of the best there are.

As an Oklahoman, Edgrecraft BBQ is my favorite in the OKC area currently. I know you said you specifically didn't want texas style though, so makes sense not to go there for the purposes of this video. Also, on the Okra, the overbreaded kind you get in most restaurants isn't the good okra. Its very hard to find good fried okra that isnt homemade. If you search "southern cornmeal fried okra" you will see some of the good kind. Lightly cornmealed, so the oil still gets in to the okra and gets rid of all the slime. Crispy and amazing. The overbreaded doesn't come close to comparing

BBQ is meat slowly cooked in a low smoky heat, not over direct heat. Oklahoma is on the edge of the Ozarks, smoked bologna fits. Here in the Appalachian area sliced bologna is pan fried til charred and eaten in a sandwich, occasionally with BBQ sauce. In Texas Kielbasa is BBQed and served in a hotdog bun. That first place was boiled brisket, yuck. lol. My favorite okra is hot and spicy pickled Okra. Corn fritters are common on Chinese buffets, one of my favorites. You should try General Tso's Chicken, unknown in China but loved in the US. Some of your fellow Brits ordered Chinese food in Florida and were shocked the dishes were not like what they got in England. They were perfectly cooked Chinese dishes ,but in a different style. I love Hunan and Szechuan style .Mongolian Beef is one of my go-tos. My dude loves General Tso's Chicken. I would not go back to the first place you visited. I hate boiled brisket.
Not all barbecues are heavily smoked. That's why you don't see bark. Some places focus on the sauce to give the flavor. Baloney is not a canned meat it's a sausage. Think mortedella without the chunks of fat.
I am in 100% agreement with Nicola regarding okra. I've tried it prepared in every conceivable way and I still don't like it. Even though everyone else in my family does. Properly prepared collard greens are one my fav southern dishes. I am born and raised on the west coast, although both of my parents are from Texas, and the difference in the cuisine cannot be overstated. I have always avoided fried foods and foods high in fats like butter or margaine so I struggle to eat home cooked meals when I vist my relatives down there. Perferring casseroles, soups, bbq (generally anything that hasn't been fried.) Just love your chcnnel. It has easily become one of my favorites and I have never been disappointed. I'm a Kansan living in Oklahoma, grew up eating KC style BBQ, so these items (1st location) look REALLY dry. Cold bologna goes in a sandwich with mustard, cheese, lettuce, and dill pickles. It's also great when fried as a breakfast meat and eaten with eggs. Fried in BBQ sauce it's good in sandwiches, too. 2nd location... my wife loves fried okra (she's from Okrahoma), I dip it in ranch dressing and it's okay. The thing about "Oklahoma BBQ" is that it's kind of all over the map. You can go to 20 different BBQ joints and discover that they do it 20 different ways. The good thing is, it's hard to find one that isn't good in some way. Drop by if you're ever in Lawton, I make the best baked beans in the universe. Ask any alien, they'll tell you.
American bologna is very similar to mortadella but a fat slab either fried or grilled on soft white bread with mustard is divine! Also - please take a quick trip north of your home and try Santa Maria style bbq which is VERY Californian... grilled tri-tip just hits different and our ranch beans are incomparable ... like fr fr Thanks for another fun episode!
As an Oklahoman from Norman I would have suggested Vann’s Pig Stand. They’ve been in business nearly 100 years for a reason. They have the best bbq I’ve ever eaten hands down.
Next time y'all are in Memphis, the British RUclipsrs Jolly, tried the voted best ribs in America. They enjoyed themselves there. Y'all should consider trying those ribs as well.

Bologna is lunch meat or sandwich meat, a very big sausage. I love it fried so the edges are crispy. It is not the most healthy thing to eat but I do love it.
That bologna is probably pan seared in a little bit of butter. Just to warm it up. Its called Fried Bologna. Some kraft Cheddar cheese mayo and toasted bread. Makes a really good and rich sandwich.
Try thick-sliced bologna in 2-3 layers with alternating 1/2 inches of cream cheese. Loved a Bologna-cream cheese for 50+ years. Chive and other flavors of the cream cheese are also magical
I think most people in the US say 'baloney', but it was super-cute listening to you guys trying to say it. ❤ One funny thing is that my wife and I visited Bologna, Italy this past Spring and it was hard to remember to say 'Balonya' instead for the city name and not what I was used to -- LOL! (Fun fact: American Bologna is named after Bologna, Italy, by the way. One of the famous meats from there is called Mortadella -- which you should be able to find in the US as well -- and American-style Bologna is basically a derivative of that. Also, see: polony, which I think is the UK version). 😀
That brisket, with some sauce, looks like my kind of brisket, no fat! Ive never seen bologna with BBQ, thats new. 😂 Try a fried bologna sandwich at home though! Thats pretty good for a quick lunch... Bologna is basically just a flat, round hotdog though so, find an all beef variety. Just as with hot dogs, pay a bit more for something that actually tastes good 😊
Some of that lunchmeat reminds me of the (SPAM in a can) that the USA used to send to the UK in cargo ships back in WW2 when Britain was having shortages on meats, people here in the USA eat it also but the UK people absolutely loved it and perfected many recipies to use it . Fried Okra can be very good but needs salt and maybe even some pepper and you can dip in catsup or cheese sauce ! Most people call that thick toasted bread (Texas Toast), very good stuff.

I finally found a really good bbq place here in Oklahoma City. We aren't really known for that. Oklahoma Smoke BBQ in Moore Oklahoma is amazing 😮 the ribs just fall off the bone and the brisket OMG so juicy, flavorful and just falls apart when you tear it. They also have a location in the Oklahoma City Stockyards 😊

I like bologna when it's a very thin sliced from the deli and then you fry it and put it on some nice toasty bread. I also like bologna just plain on one slice of soft bread and then put some mustard on it and fold the sandwich
Pretty much anywhere one goes. If it is BBQ and they do it right. It will be good. So many different styles and cultures of this way of cooking. All are good. Try them all just pick your favorite.
Next you come to Oklahoma you need to go to Medicine Park, Oklahoma. It is a small town on a river. A lot of people go there. There are two restaurants my family and I have eaten ac that are very good. One has trees growing out of it, the trees are big. They wanted to expand but, the town told them that they couldn't cut down the trees so, they built around them (Riverside Cafe). The other is The Old Plantation Restaurant.
Two of the best bbq in Oklahoma, Smokin' Joes in Davis or Van's Pig Stand Norman. I could also name several other bbq places. I have never heard of these 2 places.
Fried okra is good with ketchup if you are looking for something extra. I also add more pepper fir an extra kick. If you ever get the chance I would recommend pickled okra. Its great if you like pickled foods.
Yes, here in Oklahoma the BBQ is pretty much identical to what you find in Texas and it's delicious. But if you ever find yourselves in South Carolina then you must try the BBQ there. It's all pork and the sauce is mustard-based. It's totally different than anywhere else and it's my favorite BBQ in the country!
Never saw anyone eat bologna plain off a plate before, you make a sandwich with it, I eat it on wheat bread with bbq sauce. And I also eat it on wheat bread with mustard and ketchup, and I also take some plain potato chips and put them on it for some crunch, it's pretty good.
I don't know if anyone answered you guys, but bologna is a kind of sausage that has been ground into a paste and then packed together. Usually made with pork, but some of best imo is beef. Smoked bologna is one of those Oklahoma staples of barbeque. Strangely it's one of the easiest to make too. When I had a smoker that worked my daughter insisted I make it for her all the time. Which made me happy because she hardly ate any proteins.

Did you know that Okra is used in Cajun dishes as a thickener? That's the slimy part of it that thickens the likes of Jambalaya or Gumbo when it is simmered down!
You need to take a trip up the coast to Santa Maria, California. Santa Maria is known for the barbecue it does. I think you two would enjoy it. Santa Maria is known as the BBQ of California.

It's literally a big roll of lunch meat like you see in the deli, put on a smoker, and cooked. Some folks might fight you if smoked bologna is not on the cookout menu. My people are primarily East Taxas and Louisiana, so we not trucking with lunch meat unless it's a muffaletta

Fried Okra when your not used to it. Just take a dab of ketchup or bbq sauce (not a nunk just a dab) and try that. It makes a difference till your used to it. Once you get used to it you will eat it like pop corn. LOL Also.. Side note. Bologna was invented in Italy. The Catholic church regulated it and if you got caught selling fake or substandard product. You were stretched on a rack three rotations. Just a fun fact and you can fact check it. Its really an interesting story.
Similarly, to this day it's illegal to sell substandard wine in France, though I'm pretty sure they'll just fine you if you get caught doing so, no physical torture involved. But that's why the French wine industry has always been world-renowned; it's not something special about the soil or the climate, it's just the law.
At your next bbq place when you have the options of spicy and mild sauces, try mixing the two to create a middle level sauce. See what you think of that.

You guys will need to hit up Branson. Gettin Basted BBQ will "wow" you. I've bbq'd & chef-ed in a firehouse for over 25 years & can do a pretty good job on the smoker & Gettin Basted is the 1 bbq that I try to level up to. There are several bbqs in & around Branson so you need to get your self there!
There are different types of BBQ. There's Texas BBQ, Memphis BBQ, Carolina BBQ, and Hawaiian BBQ. These are the major regional BBQ types and there are many individual BBQ places across the country that have their own special BBQ styles.

Butchers has the best burnt ends you ever will eat. They are my standard when eating other burnt ends
Butcher's is by far the best BBQ in the state. Clark Crew is also great.

I have always avoided fried foods and foods high in fats like butter or margaine so I struggle to eat home cooked meals when I vist my relatives down there. Perferring casseroles, soups, bbq (generally anything that hasn't been fried.) Just love your chcnnel. It has easily become one of my favorites and I have never been disappointed. I'm a Kansan living in Oklahoma, grew up eating KC style BBQ, so these items (1st location) look REALLY dry. Cold bologna goes in a sandwich with mustard, cheese, lettuce, and dill pickles. It's also great when fried as a breakfast meat and eaten with eggs. Fried in BBQ sauce it's good in sandwiches, too. 2nd location... my wife loves fried okra (she's from Okrahoma), I dip it in ranch dressing and it's okay. The thing about "Oklahoma BBQ" is that it's kind of all over the map. You can go to 20 different BBQ joints and discover that they do it 20 different ways. The good thing is, it's hard to find one that isn't good in some way. Drop by if you're ever in Lawton, I make the best baked beans in the universe. Ask any alien, they'll tell you.
I've never eaten at either of these places. One of my favorites is The Iron Star. Beautiful bbq and sides with amazing corn muffins!
American bologna is very similar to mortadella but a fat slab either fried or grilled on soft white bread with mustard is divine! Also - please take a quick trip north of your home and try Santa Maria style bbq which is VERY Californian... grilled tri-tip just hits different and our ranch beans are incomparable ... like fr fr

As an Oklahoman from Norman I would have suggested Vann’s Pig Stand. They’ve been in business nearly 100 years for a reason. They have the best bbq I’ve ever eaten hands down.
Next time y'all are in Memphis, the British RUclipsrs Jolly, tried the voted best ribs in America. They enjoyed themselves there. Y'all should consider trying those ribs as well.

Bologna is lunch meat or sandwich meat, a very big sausage. I love it fried so the edges are crispy. It is not the most healthy thing to eat but I do love it.
That bologna is probably pan seared in a little bit of butter. Just to warm it up. Its called Fried Bologna. Some kraft Cheddar cheese mayo and toasted bread. Makes a really good and rich sandwich.
Try thick-sliced bologna in 2-3 layers with alternating 1/2 inches of cream cheese. Loved a Bologna-cream cheese for 50+ years. Chive and other flavors of the cream cheese are also magical

One funny thing is that my wife and I visited Bologna, Italy this past Spring and it was hard to remember to say 'Balonya' instead for the city name and not what I was used to -- LOL!
(Fun fact: American Bologna is named after Bologna, Italy, by the way. One of the famous meats from there is called Mortadella -- which you should be able to find in the US as well -- and American-style Bologna is basically a derivative of that. Bologna is basically just a flat, round hotdog though so, find an all beef variety. Just as with hot dogs, pay a bit more for something that actually tastes good 😊
Some of that lunchmeat reminds me of the (SPAM in a can) that the USA used to send to the UK in cargo ships back in WW2 when Britain was having shortages on meats, people here in the USA eat it also but the UK people absolutely loved it and perfected many recipies to use it . Fried Okra can be very good but needs salt and maybe even some pepper and you can dip in catsup or cheese sauce ! Most people call that thick toasted bread (Texas Toast), very good stuff.

It may have been good, but the first bbq place didn't look remotely appealing to me.

Being from Alabama collard greens and turnip greens are a staple and fried bolognese with eggs for breakfast or as a sandwich with mustard on it
If you guys are still in Oklahoma, PLEASE go to Gage’s Steakhouse in Guthrie. It’s in an old train station and they have the best rib eye steak and bread pudding ever.

I finally found a really good bbq place here in Oklahoma City. We aren't really known for that. Oklahoma Smoke BBQ in Moore Oklahoma is amazing 😮 the ribs just fall off the bone and the brisket OMG so juicy, flavorful and just falls apart when you tear it. They also have a location in the Oklahoma City Stockyards 😊

I like bologna when it's a very thin sliced from the deli and then you fry it and put it on some nice toasty bread. I also like bologna just plain on one slice of soft bread and then put some mustard on it and fold the sandwich
Pretty much anywhere one goes. If it is BBQ and they do it right. It will be good. So many different styles and cultures of this way of cooking. All are good. Try them all just pick your favorite.

Next you come to Oklahoma you need to go to Medicine Park, Oklahoma. It is a small town on a river. A lot of people go there. There are two restaurants my family and I have eaten ac that are very good. One has trees growing out of it, the trees are big. They wanted to expand but, the town told them that they couldn't cut down the trees so, they built around them (Riverside Cafe). The other is The Old Plantation Restaurant.

Two of the best bbq in Oklahoma, Smokin' Joes in Davis or Van's Pig Stand Norman. I could also name several other bbq places. I have never heard of these 2 places.
The original Vans in Shawnee is better, but ive eaten at them all and they are great
Kings is in OKC. NW 23rd and Portland. Doesn't look like much from the outside, but the bbq is good.
Smokin Joes In Stillwater Is Also Very Good
Fried okra is good with ketchup if you are looking for something extra. I also add more pepper fir an extra kick. If you ever get the chance I would recommend pickled okra. Its great if you like pickled foods.
Yes, here in Oklahoma the BBQ is pretty much identical to what you find in Texas and it's delicious. But if you ever find yourselves in South Carolina then you must try the BBQ there. It's all pork and the sauce is mustard-based. It's totally different than anywhere else and it's my favorite BBQ in the country!
Never saw anyone eat bologna plain off a plate before, you make a sandwich with it, I eat it on wheat bread with bbq sauce. And I also eat it on wheat bread with mustard and ketchup, and I also take some plain potato chips and put them on it for some crunch, it's pretty good.
The best Okie BBQ is The Butcher Stand in Wellston. Another good spot is Bad Brad's in Yukon.

I don't know if anyone answered you guys, but bologna is a kind of sausage that has been ground into a paste and then packed together. Usually made with pork, but some of best imo is beef. Smoked bologna is one of those Oklahoma staples of barbeque. Strangely it's one of the easiest to make too. When I had a smoker that worked my daughter insisted I make it for her all the time. Which made me happy because she hardly ate any proteins.

Did you know that Okra is used in Cajun dishes as a thickener? That's the slimy part of it that thickens the likes of Jambalaya or Gumbo when it is simmered down!
You need to take a trip up the coast to Santa Maria, California. Santa Maria is known for the barbecue it does. I think you two would enjoy it. Santa Maria is known as the BBQ of California.

It's literally a big roll of lunch meat like you see in the deli, put on a smoker, and cooked. Some folks might fight you if smoked bologna is not on the cookout menu. My people are primarily East Taxas and Louisiana, so we not trucking with lunch meat unless it's a muffaletta

Fried Okra when your not used to it. Just take a dab of ketchup or bbq sauce (not a nunk just a dab) and try that. It makes a difference till your used to it. Once you get used to it you will eat it like pop corn. LOL Also.. Side note. Bologna was invented in Italy. The Catholic church regulated it and if you got caught selling fake or substandard product. You were stretched on a rack three rotations. Just a fun fact and you can fact check it. Its really an interesting story.
Similarly, to this day it's illegal to sell substandard wine in France, though I'm pretty sure they'll just fine you if you get caught doing so, no physical torture involved. But that's why the French wine industry has always been world-renowned; it's not something special about the soil or the climate, it's just the law.
At your next bbq place when you have the options of spicy and mild sauces, try mixing the two to create a middle level sauce. See what you think of that.

It's lunch meat. Please come and get him. I'm about to get another 2 hour lecture about wonders of bologna and I can already feel my eyes glazing over.. I literally had a fried bologna and cheese sandwich for lunch yesterday, lol. Bologna is a lunchmeat but not just for lunch :). Collard greens done right though not as right as my mom's, lol. You're the first ones to try them and actually love them straight away. Sometimes there's too much vinegar and they're bitter instead of tasty.

I grew up on bologna ( baloney) sandwiches with mayonnaise or mustard. Always the best. My Dad made the best fried bologna sandwich, toasted bread. Fried bologna tastes great but stinks up the house something fierce.

You guys will need to hit up Branson. Gettin Basted BBQ will "wow" you. I've bbq'd & chef-ed in a firehouse for over 25 years & can do a pretty good job on the smoker & Gettin Basted is the 1 bbq that I try to level up to. There are several bbqs in & around Branson so you need to get your self there!

There are different types of BBQ. There's Texas BBQ, Memphis BBQ, Carolina BBQ, and Hawaiian BBQ. These are the major regional BBQ types and there are many individual BBQ places across the country that have their own special BBQ styles.
