Do Macarons absolutely, positively have to be stored in the fridge? What happens if they aren’t? I have a cottage (home-based) bakery and anything I make can’t require refrigeration. I’m assuming they don’t necessarily need to be because grocery stores and bakeries sell them.

Also, I’ve noticed that what you should do instead is, 1. Whip eggs, no sugar, just a stabilizer 2. Then add sugar in 1/3’s 3. Mix

I am wondering if 15g of cocoa powder was too much depending what type of cocoa powder you are using… I used quite a rich one and I think that may have been the reason for the flop.

Wheat flour might not work. It is much more “coarse” then all purpose. Plus, the taste will vary greatly as all purpose will make it taste more “grainy”.

Look at my recipes , I have macarons with lemon buttercream, you can make vanilla macarons, just do not add food coloring, add 1/2 teaspoon of vanilla extract.
Confectioners/ powdered sugar is not just plain sugar it also contains corn starch. So no just pulverizing ur regular granulated sugar is not the same as powdered sugar.

They’re mainly stored in the fridge because of the filling. And if you live in a very hot or humid place the filling might melt, like cupcakes.
