I have previously tried to work with Isomalt but after a few minutes it is completely cold starts to melt despite being in a cool place with air conditioner. Why does that happen? Hi Carmen, please check the humidity level at your place of work to make sure it it is not too humid. It is not the temperature but the humidity that affects isomalt. Cooked Isomalt that is exposed to humid conditions will absorb moisture from the air and become sticky and on extreme situations, start to 'melt'. Thank you for visiting and your question!
