    What is Isomalt?
    Isomalt is derived form the name Isomaltitol, which is a type of sugar substitute made from beet sugar. Isomalt is used by many chefs, sugar artists and confectioners over conventional sugar because when it comes to making showpieces, cake decorations, dessert garnishes and candy; it is an excellent choice. Compared to sugar, Isomalt is more resistant to humidity and crystallization. Therefore, decorative elements made with Isomalt lasts longer and has excellent structural integrity, compared to normal sugar. In food competitions and culinary art salons, it is very popular with professionals when it comes to creating beautiful showpieces and decorative cake ornaments.

    I was so intimidated in the past, made my first batch of isomalt today as practice for an upcoming wedding cake. My brand said to add water, but I used your method instead and it worked perfectly!       Tanya T Hi, Tanya...thanks for your wonderful comments. I hope to create more videos. With regards to your question, the key is the silicone moulds and silicone sheet. Please make sure they are designed to take high temperature. Most silicone moulds will take over 200 deg C but the there are some cheaper ones in the market that are not built for high temperature, so please do your research carefully. Have fun!

    1. how do you storage it? On freezer?
    2. why you don't put color when melting isomalt?
    3. Will cooling down hot pan into ice cold water not making isomalt harden?

    Have you ever made lollipops with isomalt? I’m wondering how many lollipops would 1kg of isomalt make. Just regular sized lollipops using the CK round sucker moulds

      Yes, it is possible to make lollipops from isomalt - in fact, they are lovely to taste/eat. 1 kg will give you a good amount of lollipops - just imagine, that's roughly 1 litre of cooked isomalt. Check how much isomalt your moulds take and you will have a good idea. Have fun making them & thanks for watching!

    Hi,fantastic easy to follow instructions. Can you use a ie a wax heater with built in temperature gauge a to melt the Isomalt ?

      Hi, I've never tried using a wax heater and from my experience, the best results are obtained using an induction hob. You can certainly give it a try - it's all about experimenting and finding out which method works for you best! Thank you for your question.

      Hi, that's quite normal. Isomalt once cooked and exposed to the atmosphere will naturally absorb moisture from the air, thus feeling sticky. Thank you, glad you had fun!

      Hi, everyone has their own technique - it's up to you to test and find what works best for you. It doesn't mean my technique is the best. I use isomalt granules from Saracino. Hope this helps and thank you for watching.

      Umer Bilal Hi Umer, if you watch my other videos, I taught you how to store in air-tight bags with silica gel. Only take the Isomalt out as soon as you are ready to decorate your cake. Don’t store it in the fridge, expose it to the outside atmosphere as little as possible. That way you can preserve it for longer. Hope this helps. Thanks for your questions.

      @@joanneford9447 It depends on your hob but I use 3/4 high on mine. The important thing is ensure your isomalt is consistently cooked till 185-190 deg C (i.e. 365 - 374 deg F). Hope this helps!

      Hi, please check if it is Isomalt or actually sugar or a mixture. Also, how long has your Isomalt stood on the cake. Over a long period of time and especially when exposed to high humidity, Isomalt will become dull and cloudy, although it is worth nothing that true Isomalt absorbs virtually no moisture at a temperature of 25ºC and a relative humidity up to 85%. Isomalts hygroscopicity is lower than that of all other sugar alcohols and even sugar itself. As a result, Isomalt makes products highly stable when stored. Isomalt have high heat resistance though, Isomalt melts only between 145 and 150ºC. Hope this helps! Good luck and keep learning!

      There are many reasons but I can’t pinpoint exactly without knowing the real circumstances. Examples could be the Isomalt wasn’t cooked properly or there is high humidity, etc. Please watch my videos explaining humidity and how to control it. Thanks for watching.

      Hi, Isomalt attracts and absorbs moisture, particularly in humid conditions. That’s why it eventually turns sticky. Think of a unwrapped piece of candy left alone on a table.

      Isomalt is a natural sugar alternative and made from pure beet sugar. Isomalt is best for high-quality decorative work, as they can be heated heated & melted without water. Isomalt’s lower melting temperature means it can turn to crystal-clear and glass-like. While sugar can also be turned into a glass-like texture and form, the high temperatures will cause it to turn brown and this is not very appealing. I hope this helps.
