I love your dad's views on food and cooking - it seems like he much prefers fresh, real flavors and ingredients, and using them in interesting and creative but balanced ways to create good dishes, and doesn't rely on excessive amounts of butter and fats to make everything taste good. I wish more food was like that.

I'm no professional chef but I like to know the taste and smell of spices so I can create some combinations for when I cook for myself.
