Smoked Salmon, Avocado, Cucumber and cherry tomato Bites. A tasty snack or appetizer which is perfect for those afternoon tea parties dinner party, or small get-together’s. They are easy to make, look beautiful on a serving tray, totally satisfying and irresistible if you love smoked salmon. It’s as simple as mashing an avocado with a fork and topping with a few pieces of smoked salmon. It’s a great combination of something salty, crunchy, and creamy.     Ingredients:
    1 medium cucumber
    1 large avocado, peeled and pit removed
    1/2 tablespoon lime juice
    6 oz smoked salmon
    1/2 teaspoon Salt (optional)
    black pepper, for garnish
    Cherry tomatoes
    Dill (optional)
    Preparation:
    Slice the cucumber approximately 1/4-inch thick and lay flat on a serving plate.
    Add the avocado and lime juice to a bowl and use a fork to mash until creamy.
    Assemble the bites by spreading a small amount of avocado on each cucumber, then topping with a thin slice of smoked salmon.
    Drizzle a little lemon juice over the salmon if you desire.
    Slice the cherry tomatoes in two and top the salmon.
    Garnish each bite with cracked black pepper or dill if you have available.
    Serve immediately or Keep in the refrigerator until you are ready to serve.
