I was doing that chromatic G string thing capo way up on the five fret. I want to add a few if these licks and see what happens.
Where did you get the idea of ‘everything is in key of G’? There are a lot of tunes in G, but also D, A, C, and songs are played in various keys depends on a range of the singer. Do you actually know Bluegrass?

It sounds like your low E, high E and B strings are off by a few cents. Either that or that guitar has some serious intonation problems. Either way, step one is tune the guitar.
The actual first step is make sure your guitar is tuned to garbage swamp tuning AKA to tune a guitar to E standard leave it on an alligator's back as it slowly sinks back into the swamp
