Can I suggest tossing your beef either in a small egg pan with a bit of butter, in the microwave, or in a small toaster oven, each way has its benefits.
Side note: I despise the waste of preheating a large oven for 30 minutes just to cook a tiny thing for 4 minutes. 😕

*THANK YOU!* for the suggestion of Catalina as an alternate for Red Ranch! I am super excited to try it, because I have been searching for years for an alternate! When I make my homemade, I have to order fries and request a few cups of RR on the side! 🤣
HEY! I TOO, USED TO WORK AT ARBY'S!! ❤️❤️
Just wanted to point out that the Arby's page she was on *specifically* said 'Red Ranch Sauce'... 😉😊❤️
That said, this is also the first copycat recipe that didn't call it 'Arby's Sauce'!! So HECK YES THANK YOU GIRL!!
Arby's sauce is like a tangy, sour sauce that frankly I do not remember what it's for,

They must of changed, when I worked at Arby's, we cooked our roast beef in the ovens overnight and sliced it the next day. Also they use to sell whole cooked roast beef as well.

That had to be a real long time cause they have been using the nastiest processed so called beef for a long time. Too bad they don't roast beef on spot. If you live in certain places LA has French dip sammies. Buffalo has beef on wick roll. Baltimore pit beef sandwiches. Those are copies I want Fellippe and Coles in Los Angeles google thats some roast beef

Great tips on products to use! Good stuff. Also I believe the red ranch sauce (Catalina) is put on the bottom bun then roast beef then cheddar. I would suggest toasting inside of buns as well briefly in a skillet with or without a little butter or margarine. The Catalina can also be used on a roast beef with shredded lettuce and tomato slices making the old Super Roast Beef sandwich they sold a long time ago.

This is a really good copycat I also had the crispy curls which I can do without and just make another one of these sandwiches instead but yeah it satisfied my Arby's craving very nice. Good job and thanks.

I currently work at Arbys and this video is wrong!!! Our meat does not sit there room Rene and neither does the cheese!!! We put the buns through the toaster but the meat and the cheese are both in separate heated holding things. When the cheese is dispensed it is steaming! When we fresh slice the beef, it’s HOT!!! We don’t microwave anything except the French dips to melt the sliced Swiss! And it’s not Catalina dressing it’s red ranch!!! 2 totally different things!!!

Interesting video, though the rolls/buns were mushroom buns made w/ a lot of egg yolks, ergot yellow inner color. Secondly, the Frito-Lay cheese has way more flavor than Arby's cheese sauce; which if eaten straight has almost no flavor at all. Nearly a placebo (visual only) sauce, not a mornay. Additionally, and oddly enough, on the Eastern Sea-board, West to the Mississippi, the Catalina was nearly universally referred to as ranch sauce on the order sheets for freight drops. Lastly, the flavor of the beef is so specific because they roasted(beef loafs) it in custom roasters that filled the back of the stores w/ a rich gravy like umami smell akin to Au Jus. Kept at temp and sliced to order; the ranch(Catalina) was the staple flavor in the now defunct Super Roast beef w/ the lettuce and tomatoes. Though your sandwich likely delicious it is both too good and not good enough at the same time.

We always assumed the "secret sauce" was thousand island. But, now that the secret recipe has been leaked we know it's not. Not even close. You just think it's Catalina. Good job on keeping everything processed to be a close taste match though.
