Brian you always throw your baking sheets on your pizza steel. Doesnt this either 1) scorch the bottom of the buns if the steel is up to temp, or 2) Undercook the bottom if the steel is coldish?
I also worked at Arbys. I can't speak for states outside of the midwest but here the buns are made locally by Pan-O-Gold. If you want to skip the breadmaking look for "Country Hearth" brand onion rolls. Exact same thing (literally)
My family declared this a recipe we need to make again! Thanks!! I didn't have time to make the rolls, so I bought Kaiser Rolls, egg-washed them, and sprinkled poppy seeds and Maldon salt on top. Worked perfectly!
Made these buns 2 days ago and used instant mashed potato flakes. It worked perfectly. Use 1/4c + 1Tbs instant potato flakes with the same amount of water will get you to 75g of mashed potato. 👍 Making another batch today. These buns are the Bomb!
The largest top round roast I could find at my local store was 4lb so that is what I used. It cooked up just as nicely (Looked great when cut in half). Like you said Bran, the shaving of the beef was the hardest part. I did my best and I'll declare this recipe a winner. The sauce was fantastic. We'll keep that on hand for burgers for now on. And the cheese sauce will be adjusted for nachos and tacos etc. The only adjustment I will make is to dial back on the salt and pepper rubbed on the outside. It was very salty. Another weeknight winner.
Technical comment from a former Arby's employee: the Beef and Cheddar does not have Arby's sauce in it, but rather Arby's Ranch Sauce, which is also red, but unavailable in sachet form. The Ranch sauce is fruitier and sweeter than Arby's sauce.
You've somehow answered a question my friends and I have had for ages about why the sandwich Arby's sauce and the packet sauce seem different. I salute you
@@ilovecokeslurpees Former Arby’s manager here, an acceptable substitute for the Red Ranch sauce is Catalina French dressing. A couple of times when we ran out of the red ranch because of delivery issues, we used that and no one noticed. 😊
thank you thank you!! Years ago (like a few decades lol) Arby's had a bacon cheddar deluxe. No red sauce, mayo (I ordered without), shredded lettuce, tomato, bacon all on top of the beef and cheddar. It was my favorite! I will be making it next week!!
Already a big fan, Bri, but this just increases my esteem for you. People love to bag on Arby's, but the Beef N Cheddar is legit the greatest fast food sandwich of all time. Now I just need me a Jamoca shake...
I have watched just about all of our bread videos all the way back to the weeds and sardines days....the bun in this video made me audibly gasp at how delicious it looks. I will need to try it soon!
Great video Bri!. for the folks that want to try this out If you can't find evaporated milk in your area , you can just use regular milk and add powdered milk.
@@BrianLagerstrom Yeah, in the cooking school I attend they had problems finding a steady supply of evaporated milk . They tried evaporating normal milk, adding cream to milk, etc. After trying a myriad of methods they found adding powdered milk was the most easiest and cost effective.
YES on the bialy’s por favor. Also do an egg custard steam bun ASAP. I just got back from Thailand and those were ubiquitous and I gorged on them daily. I trust no one more than you to nail the recipe.
These rolls are exceptional!!! Without a doubt the best! I used bread flour instead of all purpose flour and added a touch more liquid and just happened to have dough conditioner on hand that I was wanting to use. Worked like a charm. I mean, the beef and sauce were excellent as well, but for us the star of the show were the onion rolls. Definitely worth the effort. YUM
Hey Bri! ... Any chance you might take on the muffaletta sandwich at some point? I mean the original Central Grocery muffaletta with instruction on making the Sicilian bread, the olive salad, and all the detail in between. I see a lot of recipes online, but people either punt on making the bread, or they just plain get it wrong. I'd REALLY like to see your instruction on this. --- Thx! Really enjoying (watching and making the food --- had your beef & garlic stir fry tonight) your videos!
The thumbnail alone is making my mouth water. I'd love it if you made a bialy video. I had them for breakfast sometimes when I visited my grandma in New York. That's something I'd love to recreate.
What’s worked for me is the sharpest knife I have and sharpen it/hone it right before I slice and to toss the roast in the fridge. But you don’t get that warm fresh sandwich…unless you dunk in some warm beef broth before building.
Congratulations! This video got an extremely rare “saved to 3 of my playlists” rating. I saved it under my beef, condiments and bread playlists individually.
I think I’ll make this tomorrow, I can’t resist it. 🤤 I especially love that you’ve given us the recipe for the buns too; it makes it that much more special. Thanks again for sharing your amazing recipes with us. I’m subscribed to a gazillions food RUclipsrs but you’re my favourite. 🌟
Brian thank you VERY MUCH!!!! I'm from Guatemala, Central América. Many years ago (when I was a little puppy) came to my country a restaurant named Hardee's and they had in their menu a Sandwich called Roast Beef Cheese Sandwich, and the presentation was exactly like yours. I've been cooking roast beef, using different techniques looking a sandwich like Hardee's do. (They live my country many years ago, by the way) but always the taste was a little diferent! Now, with your recipe, I think I have the chance to taste that marvelous sandwich again! I gona try this weekend... it look delicious. Thanks again!!!
For a steak style sandwich i like to souvide chuck roast for 24hrs, sear, slice thin and serve. I have done a cheese steak style sandwich like this, tacos etc. Lots of options, great video, great bread...thanks
Just a recommendation, since you're coming to Spain and you have the opportunity to go to Málaga, try a "campero". It's a really simple sandwich with mayo, ham, lettuce, tomato in its original version, but there are countless variations. Either from "Barriopinto" or "El Mundo del Campero" would be best, but all camperos are amazing
I have family that remembers waaaaaay back when AArby's used to roast the beef...then later started to boil it and now who knows what they do. Sigh... This was great!
Could you stick the done beef in the freezer for 15-20 mins & use a meat slicer? And heat it back up in some au jus on the stove? Then again if you had au jus you'd want to also dip your buns :)
How about that, I been living in Spain for almost a decade and am from St. Louis! You will love it here. I'd be interested in seeing where you guys are headed, as there seems to be culinary gems in almost every other town in this country
Dang, I haven't had a roast beef & cheddar in ages because I really don't eat fast food anymore. This looks insane. Just might have to give up a Saturday to try it.
The cheese sauce is the bomb. The simple recipe makes a satiny smooth sauce unlike recipes that start with a béchamel. This is my new cheese sauce recipe for everything - broccoli, nachos, you name it.
I pull up your channel to bring up the Oklahoma Onion Burger recipe (that's dinner tonight) and had to stop in my tracks to watch this. Holy cow that looks good. I'm not usually tempted to make the rolls from scratch for these types of recipes, but man.....those onion rolls really look amazing. I'm going to have to try this on a weekend!!
Keep them coming Bri. You da man. I make everyone of your recipes and everyone thinks I am a god in the kitchen. I would mention that you provide all instruction, but that would ruin my rep. Once again - you da man!
I bet this tasted amazing! I think the Arby’s version tastes like what I would think rotten puke tastes like. This is what it is SUPPOSED to taste like!
Looks delicious even though I'm not a beef eater... i can definitely do the bun and cheddar sauce though... thanks for the step-by-step clear instructions... plus the do and don't... love your channel
i late it when Brian is making a sandwich and goes... on a mixin bowl add.... That said I can buy the bread and still enjoy a bunch of awesomeness of this channel
Definitely a healthier version of my favorite Arby's Beef n' Cheddar. I worked there over 30 years ago. The roast beef was made out of a beef slurry packed into plastic bags shaped like roasts, then frozen. The slicer dial was set as close to zero as possible. Back then it was two pumps of canned cheddar sauce over 3 oz of meat over Arby's Super Sauce, in between a Kilpatrick onion kaiser roll. Don't know if their bottles are still labeled as Super Sauce because it was meant for their Super Roast Beef at the time. Closer to red ranch and not the same as the Arby Sauce.
Brian you always throw your baking sheets on your pizza steel. Doesnt this either 1) scorch the bottom of the buns if the steel is up to temp, or 2) Undercook the bottom if the steel is coldish?
Thanks Brian, I may have licked my screen 🤣🤣 gorgeous sandwich. I have a 2 bone prime rib in the freezer I just took out, doin this saturday :) Great job as always !
Great recipe I am going to do my roast beef sous vide. I love your method of making cheese sauce! I do it your way since your first cheese sauce video. Better than bechamel sauce, easier to execute than dealing with american cheese additives that I was unable to find in my country anyway.

Should have put some horsey sauce on it Bri!
Is that a pizza steel in your oven?

@@BrianLagerstrom Oh! And the cheese sauce is also literally Gehls brand cheese sauce kept warm at around 130 degrees

I made this today and everyone loved it, the sauce and the cheese balance each other perfectly and the buns are amazing, thanks for the recipe!
Yes bri we do get in that mood to take a whole day to make a Sandwhich. Thanks for understanding

Not say you are wrong, but maybe it was the difference in salt variety? Larger crystal salt have less salt per volume
Same, but haven’t started yet. Was timing the same? My roast is longer and flatter… so I’m nervous it will cook too quickly.
I made these with the same cut but sous vide it for 24 hours. Phenomenal and so tender
Yes! Bialy Video, with a little Lox and Capers. Sometimes better than the bagel version
BRI…I haven’t eaten a beef and cheddar from Arby’s in years. I used to love them. I will definitely have to give this a try. Thanks for the memories!

You also forgot to mention that Arby's strictly uses gray beef
You've somehow answered a question my friends and I have had for ages about why the sandwich Arby's sauce and the packet sauce seem different. I salute you
Interesting. I never knew this. Thanks for sharing
No one seems to have a recipe for the Red Ranch I can find. I tried Josh Weissman's version and it is not great.

The cross section of that beef is the kind of thing that brings a tear to my eye.
I was thrilled when I opened it up. When I rewatched this today I said to my wife “damn that looks so dope”
