Had a think after my first comment. As much as i love laksa and tried most of the famous ones out there, the only one that really blew my socks off was Zhen Shan Mei at Depot Road. This was during my NS days many moons ago though. Went back to try it again a few years ago after they moved and it just... Wasn't the same. Have eaten many bowls of good laksa since those ZSM days but can't seem to get that BIEH experience again. Thanks for making this man. Hope through this series i can find success at last
1. Suppliers do sell frozen prawn heads/shell wholesale. No prawn doesn't necessarily mean no prawn heads/shell 2. Crabsticks are not made from 100% flour and dye. It is made with surimi (fish paste) and fillers depending on its recipe. 3. Characteristics of laksa (thick white vermicilli) noodles and why it is being used in dishes like laksa and beef noodles is because it doesn't absorb much moisture from the gravy. The gravy and the noodle stays the same consistency from start to end of the meal. Also the laksa noodles comes already fully cooked and gelatanised in the packaging. There is no need to boil the noodles before being able to use it. It can be used after reheating gently. It is suitable for laksa stalls which do not need to have a boiling pot of water maintained at 100C to cook noodles like ba chor mee stalls. This one takes up a lot of $$$$ in gas usage.
You will be surprised that good old laksa broth doesn't use prawn broth as base. It's the quality concoction of rempah in it that makes the difference.
Toa Payoh 94 laksa, btw, Yishun 928 laksa kicks more punch 25 yrs ago when they first started, the soup actually mellow down as the owners age, back then the soup has so much dry shrimp tat it’s actually chilli hay bee soup
Oh yes it used to be much better. And they are very sweet. If you don't want cockles they will replaced with crabstick which is rare to find shop owners that will do that. Super value for money!
I am a food lover and I travel for food everywhere in Singapore. I am not going to gatekeep this place anymore but the best Laksa I have ever eaten in Singapore is at Bedok South 58 Market - Amy's Laksa. Try ordering their noodle with Thin Bee Hoon and it's super good. Only Bedok Locals know about that stall.
Imitation crab meat is made from processed fish paste. Crab flavouring and food colouring are also added for taste and impact. Hawkers often add it to replace ingredients that cost more so that customers feel like they are getting at least something for what pay for.
You couldn't have started this series at a more perfect time lol. I'm visiting sg in about a month and I've been using your videos to build an itinerary (I'm literally coming just to eat food), hope to find a solid laksa recommendation from you! (also if you or any other singapore locals wanna throw other recommendations in the replies, please do. I'm slightly partial to malay food but I'm 100% down to try anything)
YES!! You completely voiced out my main grouse about chu mifen. It's such a substandard noodle. I hate it in laksa, hate it with fish soup. But I suspect that's because the chu mifen that hawkers use in sg is made from low quality rice flour. If you get it from somewhere that uses freshly milled rice flour/water it'll probably be much better but way more expensive.
Georges at Eunos , and Janggut Laksa is the same recipe, but inbetween got some changes. People who blind taste test say Janggut laksa at queens way taste the most originial to the famous katong laksa they taste in their younger days.
The comments on Yishun’s 928 laksa are really all spot on! As an Yishun resident it’s a decent bowl although there are better ones out there. Looking forward to this series! Would be great if you could try the Katong Laksas along the East Coast eg 328 Katong Laksa, Janggut Laksa, Katong Laksa (George's). Also the well known ones like Sungei road laksa, zhen Shan mei claypot laksa.
328 is yucks, only for tourists who know about laksa from foreign RUclipsrs. Laksa served with sealed packet chilli sauce.....yucks, like instant noodles.
I agree with your assessment of the noodles, I usually ask for yellow noodles…there’s a shop in Loyang point with laksa on the 2nd floor - the foodcourt which is nearer to the 4D shop, do check it out.
Personal Take:: Thick Bee Hoon is at it's best when it's the dried packet, rehydrated version, NOT the fresh one, it's more al dente, and because it's rehydrated during cooking, it absorbs WAY more flavor from whatever it's served with than it's fresh bee hoon varient.
Despite the broth-capturing nature of bee hoon - I still prefer the thick rice noodles for laksa for the mouth-feel. Feels more balanced, makes laksa more enjoyable and less heavy? Won't get too soggy after 5 mins of waiting too
I'm sorry but laksa and thick bee Hoon is still the undisputed best match for me. Hope along the way when you try the other laksas you'll be convinced why. Also, while sambal does play a part on enhancing the flavor, the best laksas need no sambal to make you want to keep going back for more. Other than 328 and janggut, i will definitely recommend Guang Fa Laksa at Havelock. You have to give this some airtime
Laksa Labo has super creamy and rich broth. must try! and also, Toa Payoh 94 Laksa, the hum is super big and juicy paired with the spicy broth, also damn good
Average price of laksa is $4 while that of ramen is $15, so I dont think it is fair to compare the two dishes, gotta manage expectations yo Its like comparing $5 nasi lemak with $20 nasi lemak... oh wait Haha looking forward to the new series!
i feel like the reason why the laksa in yishun isnt as 'punchy' is just cause of the fact that they are trying to make it accessible and 'healthier' for thier aging audience as well
Lau Jiang Minced Meat Noodle Laksa @ Happy Hawkers Blk 18 Jalan Membina - rich, aromatic and lemak. Make sure you only come in AM since a different hawker takes over in PM 😅
Thick rice noodle never been my fav. I grown up eating mix bihun+yellow noodle. Bihun help to cling all the soup & yellow noodle add the texture to it!! Superb
Yah please switch over to this, the thick rice noodle is too slippery and has the least surface area for the gravy to cling onto + lacking in texture. Its a personal preference but I think BeeHoon Mee offers the best balance and OG way to do it.
Agreed, traditionally only thin beehoon mee, no prawn, very important is the taupo must be cook until very soft, broth cannot be too thick otherwise feel sick after few mouths. To me 928 and 94 Toa Payoh fulfilled the above 2 criteria.
Haha I have always felt the same about thick beehoon! I suppose that is why other places cut it up and let you have it with a spoon so at least you can have some soup with it :P
I stay yishun and eat 928 laksa true it's lack some kick although it's nice but minus the cran stick. Can try the Ayer Rajah Food Centre (west coast drive). It's the near corner unit besides a china food stall.
Quite a few more popular stores outside of these too but just make sure you check if it's a morning/ evening store. Would be really cool to try our 'indigenous' food as well. I think it's quite unique. It's the 5th link. 328 katong laksa opposite roxy square and janggut laksa at roxy square and George's! the most famous 3 that even CNA did an excellent documentary on it
Hi Alderic, I am a straight man. Everytime i see you, it's strikingly how perfectly you encapsulate the standard-issue singaporean millenial guy archtype. You like your hawker food, and you have strong opinions about it. When you need an unoffensive comforting bgm, you use kerning city. When trying to express the concept of synergy/partnership, you make a wargreymon+metalgarurumon / hinata+kageyama reference. You cannot bring yourself to do the gen z broccoli hair, but you try to move past a mono-uniqlo wardrobe. You dont cover your sg accent with some fake affectation, but you will pronounce gelato/tonkotsu the proper native way. AND YOU ARE SO LOVABLE AND RELATABLE AND ENDEARING WHILE BEING THE WAY YOU ARE Thank you for demonstrating that the stock-standard sg millennial guy can be weirdly compelling and attractive. I say again hor -- i am straight. Thank you. (Call me)
Kopitiam Tanka at Malacca, super friendly owner and easily the best meal I had in malacca. Also if you find a stall that has it, try laksa with mee kia, you wont regret it 😉
Please try the OG Sungei Road Laksa at 27 Jalan Berseh, #01-100, Singapore 200027 This is the best Laksa I ever have and is something my parents intro as they have ate it for over 30yrs old in their youth where each bowl was only 20cent. They cooked the noodles in the laksa broth and the laksa is only cook by charcoal.
You should try mee kia laksa in other store. Very hard to find in singapore as you can only find in shop that sell laksa as side kicks to prawn mee or BCM.
Oh dear, that is no longer laksa then. But curry laksa which is Malaysian style. Laksa, particularly Katong laksa, is to be eaten with short thick rice noodles with spoon. That way you savour the rempah broth along with each mouthful. Not the Chinese way of eating noodles per se.
well would u like to do a review on Prawn noodles soup, there is stall at Broadway Coffeeshop at Blk 414 Yishun Ring Road, long queue always. Closed on MOnday. Aside from Prawn noodles, they also serve very delicious Lor Mee on weekdays (not weekends), ingredients like fried fish & braised pork eggs are all inclusive. Prawn noodles is superb. You need to try.
I have a theory that Alderic purposely uploads on Mondays so that we won’t have Monday blues, bless him 🙏🏽
😂 sounds legit
I agree too
he's exploiting the algorithm. Get him
Janggut Laksa @ Queensway shopping centre. Must eat with their otah
This is my favourite even though i lives in Yishun
Roxy square Katong laksa 🎉 🎉
Janggut laksa at Roxy square / queensway, or George’s laksa at Eunos. Or Depot road laksa at Alexandra village
Second Queensway janggut laksa! Roxy square laksa does nothing for me
Second depot road
If you do go to Roxy square, be aware of the loud uncle next stall. His thundery voice will hurt your ear drum if you sit too near him!!! :(

I second this 🎉
Everything changed when they removed the claypot. Unfortunate

Pavloved is crazyyy
@@Alderic. Does it mean that 1 plate or 2 plates means it won't be selected as the final 3?
@@andyng5321 most likely. unless I get it super wrong from the get-go and this is actually one of the best.
Some of my personal reccs
Sungei Road Laksa, the one near Jalan Berseh.
Dragon Tree Katong Laksa at Albert St.
I am a food lover and I travel for food everywhere in Singapore. I am not going to gatekeep this place anymore but the best Laksa I have ever eaten in Singapore is at Bedok South 58 Market - Amy's Laksa. Ah yes..another heart attack series. Thoughts and prayers to your heart 🙏
1 like = 1 prayer.
Guang Fa Laksa at havelock road cooked food Centre! Go before lunchtime else will be sold out!
@Alderic if you do go there, pls audit Meng Kee. Went there and it was very meh
Yeah, Guang Fa always sold out close to or during lunch time.
Imitation crab meat is made from processed fish paste. Crab flavouring and food colouring are also added for taste and impact.
Hawkers often add it to replace ingredients that cost more so that customers feel like they are getting at least something for what pay for.
Janggut is an absolute must! Also curious to hear your views on Sungei Road Laksa.
Can't wait for this series! Laksa is possibly my fav sg dish :>
You couldn't have started this series at a more perfect time lol. Sungei Road laksa! I know you said that cockles just taste like cockles because they are raw but the ones there taste damn solid! 🤤
That's a dam honest review. Ive tried the yishun one before too
Georges at Eunos , and Janggut Laksa is the same recipe, but inbetween got some changes.
People who blind taste test say Janggut laksa at queens way taste the most originial to the famous katong laksa they taste in their younger days.

today years old when i learnt this. great tip!
Despite the broth-capturing nature of bee hoon - I still prefer the thick rice noodles for laksa for the mouth-feel.
Feels more balanced, makes laksa more enjoyable and less heavy? Won't get too soggy after 5 mins of waiting too
Yooo the moment u showed the area I got reminded of Zermatt's video. Guarantee amazing laksa lah. But most importantly, NEW SERIES LETSGOOOO
Janggut Laksa!!! There's an outlet at Queensway shoppping centre. Must must must add the chilli. Otah is damn bomb too
I'm sorry but laksa and thick bee Hoon is still the undisputed best match for me. Hope along the way when you try the other laksas you'll be convinced why. Also, while sambal does play a part on enhancing the flavor, the best laksas need no sambal to make you want to keep going back for more.

George's Katong Laksa at 307 Changi Road. Thick, flavourful laksa broth. I've visited his stall since young, 20+ years of consistent taste! 👍🏻
Please try toa payoh 94 laksa (they will shift to whampoa on 13 July)

Its like comparing $5 nasi lemak with $20 nasi lemak... oh wait
Haha looking forward to the new series!

Should try Laksa Siglap at Bedok Corner Hawker Centre. A lesser known type of laksa from Singapore
Thick rice noodle never been my fav. I grown up eating mix bihun+yellow noodle. Bihun help to cling all the soup & yellow noodle add the texture to it!! Superb
Perhaps the thick rice noodle slander is justified.
Yah please switch over to this, the thick rice noodle is too slippery and has the least surface area for the gravy to cling onto + lacking in texture. Its a personal preference but I think BeeHoon Mee offers the best balance and OG way to do it.

I tried all sorts of thick, thin or yellow noodles with my laksa. My favourite is to ask for kway teow in my laksa if they have it.
Why are there crabstick & egg in laksa ?🙃
Will you make a playlist for nasi lemak?
done!
Haha I have always felt the same about thick beehoon! I suppose that is why other places cut it up and let you have it with a spoon so at least you can have some soup with it :P
yay new series!
Now that you are doing laksa, you’ve really gotta go try Wild Coco. It’s got the best laksa and best nasi lemak IMO. Better than coconut club
I stay yishun and eat 928 laksa true it's lack some kick although it's nice but minus the cran stick. Can try the Ayer Rajah Food Centre (west coast drive). It's the near corner unit besides a china food stall.

The curry chicken old school taste I like too!
You should try mee kia laksa in other store. Very hard to find in singapore as you can only find in shop that sell laksa as side kicks to prawn mee or BCM.

Loved the video and criticism but I feel like you’re being a little generous handing out that 2-plate status.
it happens sometimes because it's the start of the series, I don't have benchmarks yet. there's always moderation at the end!
The best way to eat this Yishun 928 laksa is to have it with bee hoon and yellow noodle mix. No other combi will make it.
Geylang Laksa Prawn Noodles (Sims Drive)
Noodlefellas (Geylang Road)
These are the regular places I go to 😋😋
George’s Laksa!
Ewww thick rice noodles? As mentioned, thin rice noodles is king.
well would u like to do a review on Prawn noodles soup, there is stall at Broadway Coffeeshop at Blk 414 Yishun Ring Road, long queue always. Closed on MOnday.
