Just tried a new rabbit recipe last night that was adapted from my mothers Veal Snitzel recipe. The rabbit was better than the veal.
Take the thin belly flaps of three rabbits. Bash them on both sides with a meat thumper until they double in size. Put them in a bowl and cover them in fresh lemon juice. Soak in fridge for about 1hr. Then dip each in flour, lightly beaten egg and light breadcrumbs. Heat olive oil in a fry pan. Fry the snitzel piecs for about 5 mins each, turning regularly tp avoid burning. Serve with mashed spud, carrots and green beans. This is a taste sensation.
