I know right and Popeyes sandwiches are big! I thought James would have the dainty bites and Millie’s mouth would destroy the sandwich but it was the opposite.
^ This. Because the casein protein in the milk helps break down the capsaicin, which is what makes the spice hot. Think of casein as a detergent - attracting, surrounding and helping wash away the oil-based capsaicin molecules floating around your mouth, similar to how soap washes away grease.
The best is sour cream, imo. What counteracts the spice is the fat. Milk has some milk fat in it, depending on the whole milk %. But sour cream also coats the tongue and mouth better.
Tip for counteracting the hot/spicey sauces is drink the milkshake, not the soda. Dairy is great for reducing the burning sensation. It's why a lot of Middle Eastern and Indian foods have a yogurt-based sauce on the side. It counters the heat from the hot chilies and peppers. Water-based drinks are not effective at doing so.
To be fair though, nothing at Popeye's is actually that spicy. Even the "spicy" items on their menu. And, apparently, the spice is SUPER toned down for the UK market. But then again, a fair amount of people in the United Kingdom rated cinnamon as "too spicy" for them in a survey a few years back. Cinnamon. lol
That is for sure NOT the mac and cheese we get at Popeyes in the states. But glad you liked it. Hopefully you get to try the one we have in Popeyes in the states someday!

The milkshake cools the hot spice more than soda does. It's the milk more than the cold that does the trick.
