材料:大概22 - 24粒
糯米1公斤(洗净,浸水至少4个小时)、食油3汤匙,葱蒜茸2汤匙、3小匙盐、五香粉1小匙、胡椒粉1小匙、黑酱油2汤匙、蚝油2汤匙
馅料:
A)五花肉500g切成大概22至24小块、香菇12朵(泡软,切一半)、栗子(浸隔夜,清理干净,加入适量水煮20分钟)
蒜片1汤匙、黑酱油1汤匙、蚝油1汤匙、盐1茶匙、五香粉半茶匙、胡椒粉半茶匙、1小匙糖
1大匙生抽
B)200g眉豆(浸1小时)、1小匙葱蒜茸、1/2小匙五香粉和胡椒粉,1/2小匙盐,1大匙生抽,1大匙蚝油
C)咸蛋黄12粒,切一半
用气压快锅,45分钟就可以了。
1 kg of glutinous rice (washed, soaked in water for at least 4 hours), 3 tablespoons of cooking oil, 2 tablespoons of garlic and shallots , 3 tsp of salt, 1 tsp of five spice powder , 1 tsp of pepper, 2 tablespoons of black soy sauce, 2 tablespoons of oyster sauce
Fillings:
A) Pork belly 500g cut into 22 to 24 small pieces, 12 mushrooms (soaked, cut into half), dried chestnuts (soaked overnight, cleaned, and boiled in water for 20 minutes)
1 tablespoon of garlic slices , 1 tablespoon of black soy sauce, 1 tablespoon of oyster sauce, 1 teaspoon of salt, 1/2 tsp of five spice powder , 1/2 tsp of pepper, 1 teaspoon of sugar
1 tbsp light soy sauce
B) 200g black eyed peas (soaked for 1 hour), 1 tbsp garlic and shallots , 1⁄2 tsp of five spice powder and pepper, 1/2 tsp salt, 1 tbsp soy sauce, 1 tbsp oyster sauce
C) 12 salted egg yolks, cut into half
Cook in pressure cooker for 45 minutes .

只是我买包装的粽叶,里面的绳子很容易断,好在我有准备多绳子,不然浪费时间了。以后不敢买包装的了。😅

星马人的粽子,福建人喜愛加黑濃的甜酱油入糯米中,也可加蒜米随便炒加点油,盐就行。黑醬油既广东人的老抽。
一定要放盐在米内,要不然煑熟后淡了不好吃。内馅可放蛋黄,蝦米干,五花肉,粟子,冬菇。绿豆或白眉豆都行。如果娘惹你甜粽多是白色的。里面有冬菇,冬瓜糖及肉一起和蒜米及五香粉。胡椒粉,芫茜粉煑的肉醬。好吃不得了!

5th month of the 5th day of the chinese calendar, Malaysian Chinese will celebrate this festival. According to my Grandma, there will be a dragon boat competition n in the olden days there were not any hawkers or stalls selling food so these ppl will make this "bak chang" to bring along for them to eat when they were hungry. All the condiments in the "bak chang" came from China!

不是应该,是确定。因为我包的粽子也是这样子的,这是南洋的家传味,与中国台湾不一样。结合福建与广东人的道地南洋味道。

Thank you for your recipe. It looks delicious. I have a different pressure cooker. Bought it 3 years ago. It is similar to many pressure cookers in the market. The red lines on the lid will come out and you could hear the sound of the pressure when it is boiling. Could you please tell me if this is the correct way to cook the Bazhang using my pressure cooker? (1) Put the Bazhang in the boiling water in the pressure cooker, (2) Close and lock the lid and use high-fire to cook until I see 1 or 2 red (?) line/s come out on the lid, (3) Switch to small-fire and cook for 45 minutes (Is it the same length of time?) (4) Shut the fire and let the pressure cooker cool down and the red lines on the lid subside before open it. Please teach me the correct way to cook. Thank you.
