Ingredients :
600g (3 1/4 cups) glutinous rice, soaked for 6 hours and drained

Seasoning (调味料):
2 tsp salt (盐)
1 tsp sugar (糖)
1 tbsp light soy sauce (生抽)
1/2 tsp ground pepper (胡椒粉)
1 tsp dark soy sauce (晒油/黑酱油)
1 tsp sesame oil (麻油)
2 tbsp fried shallot oil (炸葱油)
2 boneless chicken thighs (去骨鸡腿肉)
Marinade (腌料):
1/2 tsp salt (盐)
1 tsp sugar (糖)
1 1/2 tsp light soy sauce (生抽)
1 tbsp oyster sauce (蚝油)
1 tsp sesame oil (麻油)
1/2 tsp dark soy sauce (晒油/黑酱油)
1/2 tsp ground pepper (胡椒粉)
1 tbsp ginger juice (姜汁)
1 tbsp Shaoxing wine (绍兴酒)
1 tbsp corn starch (玉米粉)
5 mushrooms, soaked cut into half (5朵香菇,泡软,切成一半)
2 Chinese sausages (腊肠)
A little bit of oil (少许食油)
1 tbsp chopped garlic(蒜茸)
50ml water (水)

Followed this recipe today with the exception of making it into a big tray instead of individual bowls (save on washing). Fantastic, better than store bought! Thanks for sharing such a wonderful recipe!

This recipe works well with shrimp, as well as pork, beef or duck I use Pyrex custard cups instead of the aluminum cups since I didn’t haves yet. I also made this recipe totally vegan too thank you for sharing 💖

However I will not use this White Skin chicken instead will use yellow skin or corn chicken for my LO MAI GAI.
I fail to understand you precooked the mushrooms n sauces with garlic etc, but the marinated chicken pieces were not prepared cooked before steaming it. No wonder I find it difficult to eat this dish when I buy sometimes because I dont like the smell n taste of the chicken as it's not pre cooked before steaming.
But you did an excellent job, very hygenically, neatly n meticulously prepared.

Ginger juice and Shaoxing wine are to remove the raw meat smell. White pepper also helps but it will add a bit heat to the taste. :)

看起來似乎和麻油雞油飯基本上相同,不過影片多了幾個巧思,直接把薑汁倒入,省去煎炒薑片的部分。適量加入臘腸也可以讓味道更豐富。

iI make this dish, but add dried (pre-soaked plums) I prepare it a bit differently, as I cook the rice and everything mixed all at once while the rice is steaming it cooks the chicken and sausage plums and mushrooms..a real favorite..and sometimes I use it as stuffing in a turkey or chicken at festive times. Everyone loves it. No aluminum anything in my cooking though.
