    so the next time you make your dough too big, take string cheese and roll it up in the edges. it will gooey and yummy when the pizza bakes

    I make mine in cast iron. I cook on stove for 5 mins ish just to get a crisp on bottom then oven. Top rack for the remainder of time. On 425* perfect every time.

    That’s exactly what I do to my new cast iron. I’m not sure it was sanded from the factory 150 years ago. I think it was similar to today’s but not preseasoned. I can remember back in the 70,s when I got my first piece of new cast iron and it was far from smooth with no seasoning. It took me several times cooking in it to get it right. I remember my Scoutmaster showing me to take it to the creek and scour it out with sand and rocks. I guess that’s the old timey way of a grinder and sander.
    I still have that pan today along with many others.
    I really love cast iron.
    Great looking pizza making me hungry.

    10 more days until spring! We were cleaning up the garden area yesterday in the sunshine! It was SO nice. Can't wait to get our Food Forest up and running.
    Can't wait for May to see those baby goats bouncing around! Praying for a big melt and warm up for you all!

    Hi Al! I may finally have a tip for you. When your plants get taller and another set of leaves, take a tall osolating fan and put it on low and far enough away so that it gives the plants a gentle breeze. The movement of the fan back and forth replicates the wind outside. Natures way of making stronger stems.

    So many great ideas. I use the same rack for my seedlings. I double the workshop lights side by side on each shelf. I label the plug and front of the lights according to the shelf, front and back. That makes unplugging the lights you don't use easy to determine. Plug them all to a power surge strip and to a timer set for 16 hours. Works great. Saves you time turning the lights on and off. Have a great day!

    I season mine the old fashion way, in a fire outside. I have a large collection and only cook with cast iron. I even season Lodge brand that I find, outside.

    Tanner and Figaro are so funny together! Once you learn and get a sourdough starter going, you can make sourdough pizza dough too. If you fold your dough over in half and then over in quarters again, you can then place it on the tray then unfold it. Gee, I can’t believe the cold winter you are having, brrrr!

    I am lucky to have three different sizes of my grandmother's cast iron skillets. They are so nicely seasoned and smooth.
    I am confident that you will quickly find a convenient way to adjust the height of the grow light.

    I did the same thing with a lodge pan. It was well worth it and the pan has worked great for the last year. Now it is more like my old Wagner pans. Thanks for sharing Al. Have a blessed day.

    So for the pizza: 2 cups water, 1 1/2 tbsp of dry active yeast (not quick yeast?), pinch of sugar, pinch of salt, seasoning, 2 tbsp olive oil, 3 cups flour?.....

    The weather finally broke by us! -- only 21 degrees overnight, an 35 degrees with sun today! Spring is nearly here! Interesting about the cast iron -- I never knew they were sanded! You learn something new every other day.... 🙂 I see you have started your seedlings already. I'll be starting mine in four days. Can't wait!

    Watching Figaro "teach" Tanner to herd. 😁 You can see Tanner tapping into his instincts! Really fun to watch. THANK you for showing us the idea of sanding down the new cast iron. I really hate how it's not sold smooth anymore. Couldn't figure out why! Never thought to sand it down myself, even though I've sanded down old rusted vintage cast iron a million times. Duh. I'll be doing that now, for sure! Hope your week is full of blessings!

    Al.....you will be one of my lifelines soon!!! I'm over the 🌙 excited!!!! My one customer's daughter has a small farm with some extra space!!!! She's going to let me keep some livestock!! I can have small pigs, goats and chickens. I wish I could get a cow or two but beggars can't choosers. I'm so extremely happy about this. It literally will change my life!! Physical health and mental health is what I strive for without chemicals from medicine etc. Clean eating....it's all about clean eating.

    I have 18 cast iron pans. The smallest 6 inches and the largest is 15 inches. I also have 4 Dutch ovens and 3 flat griddles 2 of them round. Every one was bought at a flea market, thrift store, yard sale and the 20 inch rectangle flat griddle was rescued from a dumpster when an abandoned house was being emptied The 2 round ones are perfect for making pancakes or tortillas and also a large pixza. I am willing them to friends who understand their value. Old can be s good thing.

    I have three cast iron skillets -- one was my mother's, one was my grandmother's, and the third my husband found at a garage sale. All are the old, smooth cast iron, seasoned by years of use -- there is nothing better for cooking.

    Try sprinkling the pan with some ground corn meal before you put the dough on the pan.

    Keeping it dutch used the same lights this year and loves them.also im 50 and still use cast iron my parents had since 1956.. No idea on the age.

    Garlic butter the bottom of your crust and throw a slight dusting of cornmeal on your pan before putting down the crust .also butter the outer edge before and or after you take it out . perfecto

    My wife does not like cast iron. I do but it"s her kitchen. A stone slab on the oven makes a great pizza. Your method of seasoning is spot on.

    You could adjust the height of your new light by putting the wires from end to end instead of across the width of the light. Thanks for all the great vlogs.

    Thanks for the great demo on sanding down & prepping your pizza pan ! I have a wall full of cast iron. 2 of them are big , long griddles. I will try making a pizza on one of them !

    As a side gig I strip and restore cast iron. I buy, sell and even do jobs for others that want me to restore their cast iron. The difference between vintage cast iron and new cast iron is night and day! I don't work on new cast iron for the very reason you described. I can strip off the baked on factory seasoning but it will never be smooth unless you do what you did. I have 130 year old skillet that I use everyday and the inside is like looking at black glass. So smooth and completely nonstick. I love cast iron for cooking!

    Al if you put butter or olive oil on the edge of the crust before baking it will give it a brownish color to the edges and the pizza will look just like one you get at your local pizza resturant ...you can use a pastry brush to put it on the edges of the dough :-)

    Thanks for showing how easy it is to change the bumpy "new" cast iron into the better quality! Wow!!! I inherited a bunch of old cast but love some of the newer pieces. I can now try out your technique! Also how to use flax seed oil using the capsules, what a great idea. I have had the bottle go rancid from not using it enough. Thanks Al. Now all you need to do it post that pizza crust recipe! 😊 since it looks like you have it tweaked to your liking!

    Love cast iron pans next time you over roll the Pizza dough just roll it under to get a bigger crust on the edges you could even stuffed it with string cheese. And if you pop the broiler on for a few min it will add a little coloring.

    Al, if you fold your pizza dough into quarters and then lay it on the pan it is easier to handle and less chance of tearing it.

    When seasoning your pan, turn it upside down so the oil won't pool. It doesn't matter how thin you make your coating, it can pool and get sticky. It didn't take long at all to sand it, so that shouldn't account for a higher cost.

    the lights does not need to be that close to the tray. raise it up to cover the entire tray. Great idea about grinding the cast iron surface.

    Wow. I didn't know why the difference between a passed down cast iron and the new ones. And now to think of it. I have more problems with the newer cast irons then the older ones.
    I also love the flat pan. We are currently building our collection up. Still a few I need to make time to reseasoned.

    You know. I have a ton of cast irons here. Many old and some new. I never liked the new ones. I never felt like they worked near as well. Not to mention they are sooooooo much thinner than the old beefy ones. I never thought that hard about the “grit” factor in it being finished. I always assumed the old ones where smoothed by years upon years of use. I know now what I need to do to my newer ones. Thanks a bunch!

    I have a 25 inch cast iron skillet I use to bake pizza in, works great for parties. My son reminded me he has dibs on it when I'm ready to give it up..lol

    Also try rotating your trays every day so you get even growth on both sides of your trays. It should give you straighter plants.

    If your going to spend a $100.00 plus for a polished pan or skillet buy an old Griswold, Erie (pre-1900) or Wagner pan. I love them.

    I use a pizza stone for my pizza and have good results. But I certainly understand the benefits of using cast iron as I am a Chicago native and was raised on deep dish cast iron pies..

    Yup your research paid off !!! The cast iron of today isn't the cast iron of old. I do a lot with cast iron and I'm constantly looking for the older stuff like Griswald. Thrift stores and garage sales are the best place for old cast iron. The pre-seasoning they claim is also not good seasoning. Enjoy your new cast iron !!!!

    Great idea using flaxseed oil to season the pizza pan. I always use lard, but I will try the flaxseed. Try adding a pinch of onion and garlic powder to you crust mix with your herbs. It's awesome! Hope you warm up soon. It's 41* in Indiana today, and feels like heaven. The hens in New York City are scarfing the sea weed fir the vitamin D. We all need sun shine to get vitamin D.

    Hi Al glad to see you’re being safe when using machines that throw out airborne particulate matter. Brrrr is right it’s very cold here in Connecticut as well. Oh I Love Figaro and Tanner playing , so cute. We take our cast irons and coat them in canned crisco and start a heavy fire in the spring and give them a good burning. After they are seasoned we wipe them out and try not to use soap, just wipe. Have a great day.

    All the new Lodge pans have a rough texture because they need to be rough when they spray on the seasoning. The rough texture is needed so the seasoning has something to stick too.

    Next time go ahead and make it the same size and let it hang over the sides the put cheese rectangle slices on the edge then pull the hanging dough over it for a stuffed crust pizza so you don’t need to change your recipe you can change the stuffing to deferent things to spice it up and make it fun

    Hi Al, I think your seed starting is being affected by the cold coming thru the window. I have done this similar setup and had to move to interior space for better results. Just FYI

    that pizza looked delish yummm!. next time if the dough is to large you could make cheese stuffed crust coated in garlic butter. i love Lodeg and have several pots but have not enough room for the pizza skillet. we cook store bought pizza on a stone, preheated it takes about 5 min off the suggested cook time.

    If you make your dough to big again, you can put cheese around the edge and fold the extra dough over it and have cheese stuffed crust!

    Love my pizza stone. As hot as the oven will go which is somewhere around 550°F. 10-12 minutes.

    if you get a bag of Italian 00 flour off amazon (really not much more expensive either) it makes a big difference in the taste of your pizza dough and gluten structure, also letting it sit in the fridge for 1-2 days to rise instead of a short 2 hour rise helps to develop more yeast flavor if you're looking for more stuff to try. i've been on the same quest to make great homemade pizza good luck!

    Enjoyed the video and yes you do make me hungry. Great idea on sanding the cast iron yourself and then seasoning it. We bought some cast iron serving skillets like they bring your fajitas to the table on at a Mexican restaurant. They were rough like your pizza skillet. I might have to redo ours now using your treatment. Thanks again and y'all take care and God bless.

    Loved today’s vlog. They’re all good. Suggestion/Question...Why don’t you let Tanner run free when you guys go out & then put him on lead when you get to each pin, or leave him free even then w/ a command to wait? Where he going to go? The exception would be when you walk your daughter to the bus, of course. It’s good for his confidence, & allows him to make mistakes on your watch. Just a suggestion. Blessings.

    After using numerous vintage smooth cast iron skillets, new lodge cast iron skillets, and new lodge cast iron skillets I sanded. I can tell you without a doubt the smoothness has nothing to do with how non stick the surface becomes. It’s all about the seasoning (how he did it is good). Even if the pan is smooth as glass, If it’s not seasoned correctly you will have problems. There are several videos on RUclips with people frying eggs in new un-sanded dry, as in no cooking fat added, lodge skillets, and the egg slides all over the place. However if you are going to smooth them out for whatever reason don’t use an angle grinder, you will wear groves in it just like he did in the video. A simple hand sander is all you need and you can get the job done in just a few minutes.

    Everything is better in a cast iron pan Al! I love my cast iron pans. A lot of people also sand the newer cast iron and then season. I wish they wouldn't put the rough texture on there, but they do. Tanner and Figaro are so funny together, looks like our little Kahlua, the mini Aussie and my G. Shepherd playing. lol Hope you get good success with your grow lights. The pizza looks so yummy. We eat a lot of homemade pizza in this house too, but I've never seen a cast iron pizza pan! I will be getting that one.
