My precious momma fixed pork chops and sauerkraut when I was growing up. She didn't put other veggies in it. She would cook whatever veggie she and I wanted separately and put it in a separate bowl on the table. I seem to remember that she would lightly brown the chops in a skillet and then layer them with the sauerkraut and throw them in the oven. DEEEEElicious!!!!!

Your hair looks great Catherine. This is a very traditional New Year’s Day dish for my German heritage. Sauerkraut & pork is one of my favorite dishes and I never drain it, if fact, I’ve been known to add sauerkraut juice to my country ribs (with bone) when I make pork and sauerkraut. I’m sure yours is delicious too. It’s kind of like macaroni salad, everyone has their own recipe.
My mom made this dish often. Her father was German and we had lots of potatoes and sauerkraut. Pork chops were her go to meat to have with these two foods. I’m going to do this recipe as soon as I get the ingredients. I love the better than beef product. Thanks again for another great dish. Blessings to you.
My grandfather was from Germany also. Growing we had lots of dishes with pork potatoes and sauerkraut! I love the combination!! I am 70 years old and still cook this way!

We called this Kapusta....made with spareribs instead of pork chops, caraway seeds, onions, cubed potatoes, salt pork and sour kraut. Goes good with some rye bread and butter!!!! IT'S SOOOOOOOO GOOD!!!!

As I remember, she used onions, garlic and potatoes. Instead of pork chops, she used pork ribs. Unfortunately, it isn’t one of the dishes for which I remember all of the details. I tried over the years to recreate her version, but never really got the taste I remember. My husband’s family always had black eyed peas, so I missed the time to cement in my mind exactly how my grandmother prepared her New Year’s sauerkraut, pork and potatoes. @@maryellerd4187 There are lots of ways to make this. I made pork sauerkraut and potatoes for New Year’s. I used pork loin this year as it was on sale. I usually use pork chops or ribs though. The difference in flavor comes from the fat and bones from the chops or ribs. I always bake mine, it may but my aunt does hers stovetop. Baking adds more flavor in my opinion because all the flavors blend together. Cutting up some onions in it tends to make the sauerkraut less sour. Some people drain the brine from the kraut or also rinse it then add water for cooking making it less sour also. I just use the brine and add water if necessary. I like it better that way. More flavor. Since your grandmother used ribs, some of that flavor is coming from the bones and fat, the onions mellowing the sour from the sauerkraut. Maybe she drained or rinsed the kraut? I don’t, I want more flavor not less. Good luck recreating that version. I also do black eyed peas for New Year’s. I try different things with that. This year I used black eyed peas, tomatoes, okra, corn, tomato sauce, onion, garlic, cayenne pepper, ham and bacon. I don’t cook or fry the bacon first because the bacon fat adds more flavor to the whole dish as it bakes in the oven. Same with the ham, it all bakes together, the fat adds to the flavor. You don’t need to add any other fat like butter. The bacon fat really does the trick here, plus the ham. Also, when using canned tomatoes like I did this year, I use the tomatoes and the juice because that juice adds flavor and the water in adds moisture for baking which bakes down thickening the sauce as it bakes and concentrating the flavor. I use roasted garlic especially when making mashed potatoes and the ham flavor is great to season up many things. I love pork 'n sauerkraut, but have always used the fattier cuts, very well browned, No beef broth or butter, allowing the pork fat (and some garlic) to flavor the kraut and veggies, and give a nice brown color to the kraut. Country style ribs or shoulder work well, and it is a great dish to adapt to crockpot. Another dish, like stew, which gets better as leftovers! Winter comfort food!
