If I add carbs to it, it's going to even make it more dense in calories? And my diet was sugar free. How do we address that?
Hi Rujuta mam, I understand your points and also agree, however we need to acknowledge that Indian diet doesn't actually fulfill any other requirements except for Carbs. I recently visited abroad and there I saw both men and women so so so much fitter than us. I myself have a very good diet and mostly follow the kind of food habits you suggest, I also fast once a week, now In shravan its twice a week, still I don't tend to have the kind of physique they had. The physique which Indian actors are spending lakhs to attain they have it naturally, like just the perfect body and skin. I understand genetics and all play an important role and not doing a direct comparison with the foreigners, however its true that there diet is mostly protein and fiber and soo less carbs. It is not just genetics but decades of following that kind of eating habits.
This Rutuja is like any other nutritionist. Doesn't being anything new to the table. Everything she says is already done by us. Everyone eats legumes, dal, rice, roti, nuts etc. All of these things are simple or complex carbs. The protein available in them in not complete in amino acid profile, is not bioavailable, and the ratio of carbs to protein is way too high, so one ends up eating excess carbs while getting low quality protein from such foods. All vegetarian sources are class 2 sources of protein, except soy which is class 1. Eating dal and rice together Doesn't solve the problem, as methionine in rice is not present in the right amount to complement other amino acids in dal.

Just cut carbs, we don't need as much of carbs as we think we do. Momentarily you won't miss carbs
