Thanks for the video, Mr. Jiggin'. "Sheepshead" (sic) is the eating end of a sheep; i.e., a sheep's head. What we're fishing for here on the Left Coast is California sheep head, often written sheephead (Semicossyphus pulcher), a species of wrasse native to the eastern Pacific Ocean.
