Finally a carnivore bread I can live with! I halved this recipe; used a tsp of onion powder to mask the pork rinds and egg flavor, added a couple pinches of salt; also added 2 tsp allulose because I don't like any bread that doesn't contain a background sweetness, and I'm not a purist. The local eggs I get now are huge, so I probably could've gone with 4 and a yolk instead of 6, and I didn't have cottage cheese, so I used 1/2 c sour cream and 2 oz cream cheese. Since my batter was a bit more liquidy, I baked 1/4-cup of batter in muffin top pans I have. They didn't rise at all, but spread perfectly round and flat and tasted great. A little on the moist side because of all the eggs, but still OK, and the perfect size for a little open-faced sammie, which is what I like to have as a sort of side dish when I get tired of just meat. Next time I'll weigh my eggs and get a more cakey texture; maybe adding in some baking powder. I think the texture is just right to add some cornbread extract as well, so I'll try that, too; might add some cream to this recipe also to liquify it even more, spread thin and make soft tacos out of it. I just also tried Chris from Nashville's new bread recipe. Loved the texture, couldn't stomach the taste, but maybe combining these two recipes might make something interesting so I'll give that a try as well. Awesome, awesome, many thanks!

I love that this recipe uses whole eggs! I don't want to be wasteful. If I use separated eggs I sit them aside to use later. But don't usually get to them in time so things go bad. 😢
Ok…my first loaf just cooled enough to try. I love it. I think I might add a tiny bit of salt next time. But I also think it would be a delicious treat for ketovores if you added a good sweetener…the look and texture reminds me of pound cake. If you can and do tolerate that stuff, I think it would work.

I made this again yesterday. This time, replacing the cottage cheese with sour cream. Same 1.5 cup. My wife said she likes it better. She said it’s more like bread and that’s like a quiche if that makes sense. You have an amazing recipe! Please don’t take offense to me altering. Sour cream seems to have significantly less ingredients as well. Give it a go! I’ve shared your recipe with many people

But she is giving you a recipe for CARNIVORE bread, you cannot also complain about the basic cost of every day items. Eggs are not an expensive ingredient.... To me it just tasted like a very eggy and very pork rindy rubbery thing. I feel like I wasted so many eggs because I’m never going to eat it! Not sure what went wrong and why everyone else loves it but I won’t be wasting any more eggs trying to get it right 👎🏼
Dang. I forgot to add the butter because I’m postpartum and under slept but decided I will eat it no matter what because of how much went into it haha. It came out fine and I’ll just toast it and enjoy. Anything is good with butter! Eager to try again with all 4 ingredients haha

Finally a carnivore bread I can live with! Folic acid is synthetic. You need folate which is a b vitamin found IN meat not veggies
