Seasoning is the soul of this dish, and the keys of making it right: make your own chili oil (stir fry the peppers then grind them into fine powder), grind freshly roasted Szechuan peppercorns, and slip a teaspoon of lard into the soup base.

Ingredients:
Dried red chili pepper 2 cups
White sesame
Spring onion
Ginger
Whole chicken 1
Pork belly 1200g
Minced garlic 1 tsp
Fried peanut
Sichuan preserved vegetables 1 tsp
Ground beef 100g
Peppercorn oil
Chinese cooking wine
Minced ginger 5g
Pixian broad bean paste 1 tbsp
Plain bean paste 1 tbsp
Sweet black rice vinegar 1 tsp
Dried noodles 200g (or fresh handmade noodles)
For the seasoning mix:
Soy sauce 1 tbsp
Peanut butter 1 tbsp
Minced peanut 1 tbsp
Chili oil 1 tsp
Szechuan preserved vegetables 1 tsp
Peppercorn oil ½ tsp
Sweet black rice vinegar ½ tsp
Minced green onion ½ tsp
Ginger & garlic juice 1 tsp
Freshly grind peppercorn powder ½ tsp
White sesame ½ tsp
Sesame oil ½ tsp
Lard 1 tsp

The variety of ingredients and techniques he used in all of these videos make Gordon Ramsey's dishes so simple and plain. I like Gordon Ramsey, but I think Chef John 's cooking is so skillful and satisfying to watch. It's a whole new level.
the point is that this chef doesn't know how to cook western dishes well but Gordon can.
@@HanhLe-jy2fe you can say it the other way round as well. This chef would cook better eastern food than Gordon.
Gordon creates videos that are basic on purpose. It draws in alot of people to have easy recipes. He would never cook at a high level on video for free anyway.
Gordon teach to make a delicious meals showing simple techniques which you can cook at home. This guy shows meals only true chefs can make. Nice videos but I wont learn anything and very hard to cook anything.

While the videos are awesome !!!! and I am super glad i found this channel. Just one small request if possible, the current light used flickers in slow-mo shots. I think you are using florescent lights, LED lights on the other hand don't flicker if they have a properly matched and well designed driver. That would remove the flicker and make some really well focused and crispy slow-mo shots (which are pretty amazing already) :)
