When I make my friend rice, I always use cold leftover rice that was made the day before. Once everything is in the wok, I keep stir frying on high heat until the rice grains separate in such a way that you can make them out individually, that’s when they’re done. A little bit burnt flavour is necessary - that’s called wok hay, exactly what uncle roger talks about.

2nd recipe is for us Indians who prefer simple and fast dish..i have tried this (duhh,a food lover and with a passionate one who loves to cook it's like i try everything xD) and this took me 10 mins to prep and coming to the taste.. i don't even want to talk.. i prepped this once for my lunch, had a spoon until my colleagues took my whole box🥺 and were literally obsessed had to make 10+ portions for this "bhukkads" the next day❤️ A hearty appreciation for your dish chef for being so freakingly good❤️
I think it's great that the boss shows 2 variants. The first variant I could not cook 1:1 here, because some ingredients are too exotic and not, or difficult to obtain. But I will definitely test version 2.
You can use some of the methods in V1 - for example, pre-fry your proteins and aromatics (esp with bacon or ham), save the oil and use that to fry your rice. It makes quite a big difference.
Hot Wok, Cold oil. Chef John taught me this. If only my wok stopped sticking and was a this level 😀. My wok is huge as i have too cook for six people in my family, i cannot toss with one hand. I try lol
Key ingredient to fried rice (other than rice itself) is the eggs. It regulates the oil in the dish, and tastes great. Be generous on the eggs if you're frying rice

The cooking station chef used is a pro burner which generates lots of heat during cooking. The water helps to prevent the cooktop from overheating. Without it, the cooktop is hotter than boiling point. The water is recyclable; not wasted.

I have gas stove, but it’s not the same as commercial one.
you could purchase a propane burner. The one that's around 50 bucks at Lowes. do it out side. The flame gets really high.
