    Glad I found your channel you are the best, and the next time I make Banh Mi I will make my own pate.... today I had the best crispy pork belly Banh Mi.... happen to be on a nice three month vacation in Vietnam...

    You should melt some extra butter to cover the top. That's what protects it and helps it not dry out.

    Using less aggressive heat would make the liver more tender as the heat will overcook the outside and make it tough.

      I find that it doesn’t really make a difference once it hits the foot processor with all the butter and stuff. Still comes out super moist either way!
