Most chicagoans do not get with cheese but yes you can if you want to. Just not every place has it as a option. I think a beef with provolone and hot peppers is great
I’m a Chicagoan. I think the cheese makes it better. Yes it’s not a cheesesteak but I don’t give a shit I can eat how I want unless if it’s ketchup on a hot dog.
Al's is good. I also recommend Frannie's & Jay's beef. Romas used to be one of the best too until the last owner sold it but didn't sell his homemade giardiniera recipe with the business lol.
@@johnhernandez4734 I think Johnnie's is good and no slouch as well as the price, but on pure flavor alone I would have to give it to Al's. I also really enjoy Al's giardiniera even though its just celery with oil and pepper flakes. Quite a few classic beef spots have that peppery beefy flavor, but none have the spice mix that Al's does maybe besides Novi's beef in Berwyn.
Cheesey beefs are acceptable at some locations. It’s not traditional and no one will frown upon it. Some locations though just don’t offer it or won’t do it.

If you want cheese on your Italian beef, go to Philadelphia. The reason they put cheese on a steak and cheese sandwich in Philadelphia is because that meat has no seasoning... they got a mask, the blandness. Italian beef in Chicago has plenty of seasoning.
Shiiiiiiiiet i put cheese on my beef all the time and order my shit dry. Idk just feel like a dry beef is juicy enough as it is without them dipping the whole thing in jus. Also I had a teacher in 7th grade who used to always rant about how the whole no ketchup on a hot dog thing started off as a “chicago dog” sort of rule of thumb cause a chicago dog already has tomato and a whole bunch of other stuff on it and that’s why it doesn’t need ketchup but over the years I guess places all over the city kind of adopted that for all hot dogs but if you ask me do whatever the hell you want lol.
