What's so great about Eggplant is, it's a canvas for the flavors you cook it with. It lends a meaty texture, while absorbing the marinara, ricotta and mozzarella. Hope you enjoy!
Hello Rock Star! 🙌🏻 Love that you made your own Ricotta! Yes, I've found 1/4" thick is best. In the past, I've sliced 1/2" and they didn't bake right. 1/4" cooks and bakes perfect, while absorbing all the flavor.

In my cookbook, there's 12 of my popular recipes from Tiktok and 48 new ones. A variety of everything. I really love Mediterranean food, so I use a lot of olive oil. What kind of food does he like? You could do a Linguine Aglio e Olio and add shrimp.. It's simply garlic and olive oil. How that? Let me know and maybe I'll do a vid. Congratulations on newly being married, you're a great wifey!
I found this harder than it looked haha. The eggplant was greasy and didn't taste light and my marinara was a bit more chunky... I cook alot and am always happy to learn.
Hello Laura, I'd be happy to help. I've found if the oil is not hot enough before adding the eggplant, It absorbs too much of it. You can also remove to a paper towel lined plate to help remove some of the excess oil after sautéing. For your marinara, did you make mine? If so, all you need to do is zap it in a blender and pulse a few times to smooth it out. Or you can use a hand emulsion blender. I hope this helped :)

Love your recipes and dying to try this. In my house I have to put meat in every dish for the family to be happy. Would a simple meat sauce work well for me in this case or would it be too heavy for this delicate eggplant?
My husband and son are the same way! Protein with every meal, drives me crazy. LOL. You could or serve with grilled meats, like lamb chops or pork chops, even sausage or meatballs.
Hi shereen Why did you cover the eggplant with flour before frying? Because I used to do it without cover it with flour. It will make any difference if I skipped the flour ?
Ali Soly great question! It’s not for flavor but for texture. It creates a thin coating/crust to the eggplant. Never tried pan frying without for my rollatini 😊
Thanks. A higher heat will absorb less oil yet fry until crispy. Lower temps absorb more oil. Make sense? Also, you can remove to a paper towel lined plate after frying to remove some of the oil.
