    When everyone thought making bibingka is hard. Well, here is the simplest and easiest way to make your own bibingka. It is so easy, soft and moist like bibingka you buy after hearing simbang gabi. It will surely bring you the Filipino Christmas feels!
    Sharing with you how to make bibingka soft, moist and easy:
    Ingredients:
    1 1/2 Rice Flour
    1 tbsp Baking Powder
    1 tsp Salt
    3/4 cup Sugar
    1/4 cup melted butter (1 stick)
    3 eggs at room temperature
    1 1/2 cup coconut milk
    1 cup grated cheese
    For Toppings:
    1 salted egg - cut into 8 thin slices
    melted butter
    grated cheese
    grated coconut
    Directions:
    1. Heat Banana Leaf to make them soft and will not crack when put into pan. It will also make the leaf clean.
    2. Line it into 8 inch pan then brush it with butter or vegetable oil (do not use Olive oi it will make the bibingka taste different after baking). Set aside.
    3. Combine dry ingredients and sift together rice flour, baking powder, salt and sugar. Then whisk until well combined.
    4. Add melted butter and eggs one at a time then mix gently.
    5. Add coconut milk then mix until no lumps.
    6. Whisk in grated cheese. Mixture will be smooth and runny.
    7. Pour it into pan.
    8. Bake at 350°F for 25 mins.
    9. Take it out from the oven then garnish it with cheese and sliced salted eggs.
    10. Put it back to oven and bake again at 350°F for 25 mins.
    11. Once done while warm brush it with melted butter.
    12. Then top them with grated cheese and grated coconut.
    13. Serve and Enjoy!
    Note:
    ** Use freshly grated cheese than store bought grated cheese. Store bought grated cheese has wax that tends to be hard when baked.

    pwede po bang glutinous rice flour gamitin? pag walang literal na rice flour lang

      If you use glutinouse rice flour the texture will be sticky and chewy just like the royal bibingka. Using rice flour the texture is cake-like.

    Ur recipe is good, just a suggestion, I think I is much better if u just add d Cheese only on top. Not oncake mixture, it might b too salty.
