I make bulk hummus about once a month, and freeze serving amounts in zip-lock bags, and thaw one in hot water while I brown cubes of leftover foccacia (I always have some around). It also goes well with a coarse-chopped salad in vinaigrette which I also seem to always have around, usually with cauliflower and broccoli. Drizzle with pepper oil, and yum! Quick full meal!

I'm on a low carb diet so I made this with lupin beans instead of white beans and used Keto bread. It was delicious. I warmed the bean mixture slightly for the leftovers and that worked great too. Thanks Refika and team for another delicious recipe.

An amazing recipe! So THAT’S what aquafaba is! I love using it but never thought to heat it. That’s a lot of tahini, bread, and beans. (Never too much butter!) I cook for just myself so I will halve the recipe - what’s half an American teaspoon of cumin 😂😂😂😊 ETA: Maybe make the whole batch but only use as much bread as I need for one serving, that way the leftovers can stay crispy and not soggy for my next meal. Also, I love fresh herbs like coriander, mint, dill, parsley, basil, thyme. For this I would use coriander and parsley, and maybe some mint and/or dill. Or just make a yogurt sauce on the side, perhaps tzatziki. I’m very keen on Yotam Ottolenghi recipes these days, from the test kitchen, the OTK. He and Noor especially are very inspiring, as are Chaya, Verena - have you seen her Lemon Cake with Labneh, Mascarpone, and Cream Cheese Frosting? It’s a BEAST! - and the other chefs whose names idk yet. As with you, I love everything they make. Their OTK videos are on their own channel, of course, but also on Food52.

Oh I'll need to try this, especially in the summer months. I can just put the bread chunks in the airfryer, and the rest doesn't need much heat, so you can have a filling breakfast or use it as a side dish without dying of heatstroke in the kitchen.
Good to know about using white beans instead of chickpeas. Any suggestion for substituting tahini? Love Turkish food but i cant get used to chickpeas and tahini.. (PS. I googled and found out that cashew butter could be an option)

Many of the western countries have it in grocery stores but if anyone looks and doesn't find it, there are YT tutorials on how take vegan yogurt from scratch. This would allow your vegan followers to execute the full recipe
