Once again, "Top shelf, no dust" recipe. There are so many differences with ALL New Mexican recipes. From Southern to Northern Nuevo Mexico and I love them all. I'm getting closer to drafting up a cookbook of family recipes. Thanks again for all you do. Simon Que Si, keeping our traditions alive.
Loved your comment, and agree about how the recipes change even from one part of the state to the other, but they're all good. If you see my biscocho video, I even mention how Northern New Mexicans call them "biscochitos." That's so cool that you're putting together a cookbook. You should title it, "Simon que Sí." I would definitely order a copy. (Feel free to send a recipe you'd like me to try out.)
Miss Marcy I made your huevos rancheros and it sooo good! My daughter orders it every place that we eat that offers it on the menu. And she said that this was better than anything that she’s tried! She’s brutally honest and usually critiques in a nice way. But she’s always honest. Kudos to you lady thanks for sharing such a great recipe♥️
I make huevos rancheros at least 3-4 times a week. I watched your video to see if I'm doing it right. I copied the recipe from having this dish in resturaunts. Whew, I've been doing it right 😂 thx 4 your videos
Hands down one of my favorite breakfast dishes that I like any time of day! I always have my eggs over medium and eat around the yolk so I can save it for last. I prefer my with red chile, but green is good too!
It's very common in my culture, so I really love it. In fact, check out my recipe for chilaquiles ruclips.net/video/s414Ba25yjQ/видео.html Thanks for the comment. Be sure to let me know if you do make it.
I'm so happy you like my recipes and that they are like the ones your family made. I take it as a big compliment. Thank you for watching and leaving such a nice comment.
Awesome delivery and smooth skills you remind me of me with timing ...its 3 am and not only is my mouth watering my stomach is wondering why we aren't in the cocina...mom used to cook eggs in oil but health wise for Hispanics should substitute frying...and refried beans with flour tortillas in a South Texas rules...Alonzo❤
My parents are from Santa Fe NM I love all the New Mexican recipes. I’m in NEW YORK and once a year wegmans market sells this chili for 3 days so I got mine I’m so happy. Thinking about getting more. I love your recipes
That is so cool that you can find Hatch chile in New York! I got so excited a couple of weeks ago when I went to Memphis and saw it there, I even took a picture! Lol. Thanks for the comment. Hope you make it out to Santa Fe once in a while. I really love it there.
This video looks delicious. I’ve never made this dish before, but I am definitely going to try it. For some reason, I always thought this dish was made with chorizo. I just started watching your videos and everything looks so delicious and pretty easy to make you can’t wait to watch all of them and start trying them. Thank you for sharing your recipes and videos. I really appreciate it and am enjoying every minute of it. Jackie 😊
In Texas it is sometimes made with chorizo. The salsa usually has jalapenos instead of New Mexico green chilies. I have never met a dish of huevoes rancheros I did not love. ! 😊
What you're doing on your channel is important. Here in Denver we have gone to many Mexican restaurants and they always serve the same sauce whether it be green or red. I think all the local restaurants buy the same sauce by the 5 gallon from purveyors like Nobel Sysco and Shamrock. When I cook I don't skimp on the flavor and if the sauce is too loose then I can remedy that. Learning to cook great dishes like what you show on your channel is much more satisfying..I hope people are inspired to cook more because of your example here..take care!
I’ve never l been tempted by guevos rancheros, but you’ve made them look so delicious, I think I’ll give them a try-as soon as I find some Hatch chilies. When are they in season? I plan on traveling to Texas in March, and might cross into NM to buy this chili I’ve heard so much about. By the way, Marci, do you have a cookbook with all your recipes? Everything you make looks so appetizing.
Back in the day, in ABQ, I could get a whole sack of Hatch chile, roasted, for 12 bucks. I can't afford the 50 buck or more these days. So I use the preprocessed stuff. And it's not that bad! My quick and easy huevos rancheros is to put a couple corn tortillas on a plate, throw a handful of grated cheese on and either some green chile (or my homemade red sauce--Barker's on the bag recipe) nuke it for 90 seconds and throw a couple eggs on top. Yumbo!
Thought you might want to check out my video for chilaquiles. I make them with red chile: ruclips.net/video/s414Ba25yjQ/видео.html And here's my recipe for red & green enchiladas. Just fry an egg and place it on top and you are good to go: ruclips.net/video/nlQ9hvrUP_M/видео.html
@carlacordova728 in Southern NM they do, it's a regional thing, or however u grew up I noticed. Some do, some don't. Lot of people in NM hate on cumin and cilantro for some reason I noticed LOL. it's more of a Mexican thing fo sho
It's not pronounced "chili" It's pronounced "chi'lea" We are Native Americans with Mexican and Native Indian blood running thru our veins. Conduct yourselves as such, And be proud!
Can't beat the NM red or green. Grew up in Roswell, NM so I know.
My dad’s side of the family is from Roswell. I spent summers there. Nothing beats NM food!
I'm from Roswell too!
I grew up in Roswell, too. One of the best huevos ranchero plates I ever had was at the Valdez Cafe on Main Street in Roswell back in the early 70's.

I remember that place! My favorite dish was the taco plate with an orange soda... Great memories!

Those hero shot at the end look great, such a pretty plate of huevos rancheros! ( and yes I still don't eat eggs, hahaha)
Thanks! I’ll be sure to show your comment to Tony. (I don’t know how you get by without eggs! 🤷🏻♀️ But you’ve made it this far. Lol)
making me hungry

That looks Tex mex
👍
I started roasting my corn tortillas years ago. instead of deep frying.
hell'o whats a good sub for the hatch pepper thank you
“Native New Mexican” INSTANT SUB we gotta watch out for eachother
I love it! Thanks so much!
❤❤❤
can you do one with red chile?
Thought you might want to check out my video for chilaquiles. I make them with red chile: ruclips.net/video/s414Ba25yjQ/видео.html

i live in ajo, az and i can't find hatch chilis here. they have a big green chili, but it didn't say; 'hatch'.
Can I make this without the cumin? I just don’t like cumin
Of course, you can skip the cumin.
New Mexicans don’t use cumin in Chile. This is a first for me.
@carlacordova728 in Southern NM they do, it's a regional thing, or however u grew up I noticed. Some do, some don't. Lot of people in NM hate on cumin and cilantro for some reason I noticed LOL. it's more of a Mexican thing fo sho
Looks yummy but i can't aquire a taste for cumin but it's optional but the chile looks great
Thank you for saying that! You'd be surprised how many times people get angry about me using cumin, when the easy solution is to leave it out! Lol
My mom.used putbchiliesvin warm. Kitchen towel
I prefer French toast
We never used cumin in our Chile .
They don't sell hatch chilies where I live😢
Use Anaheim or Fresno chilis, they are the same thing.
I prefer my huevos rancheros with a flour tortilla
It's not pronounced "chili"
It's pronounced "chi'lea"
We are Native Americans with Mexican and Native Indian blood running thru our veins.
Conduct yourselves as such, And be proud!
So this one don’t include beans and eggs I had for breakfast in Mixico
;-)
Never cook with olive oil, avocado oil can tolerate a higher heat
YOU SHOULDN'T RINSE YOUR HATCH CHILÉ BECAUSE YOU'RE RINSING OFF ALL THE CHARD FLAVOR WHICH ADDS FANTASTIC FLAVOR TO THE DISH 👌💯
No cumin. 😥
I never rinse my chilis, it washes off a lot of flavor.
