    Black beans are ma favorite.
    This looks like a great meal for any old time of the day. The touch of fresh tomatoes and avocado makes it feel complete.

    The main thin g I miss about living in South Florida was the black beans. Best black beans & rice of my life was at that old classic Cuban restaurant in Ybor City.

      @@ChefBuckRecipes Unfortunately no, I'm from Miami originally but was visiting family in Tampa at the time. Back home in south south florida I was spoiled for choice as far as cuban food, but the place in Ybor stood out because it was the first time I went anywhere upscale.

      this is kinda similar to a Mexican Huevos rancheros, but without the rancheros sauce and tortillas

      CG' is bueno, she's been hanging out with her mom and leaving me to fumble with my tripod. I make variations of this breakfast for CG and I quite often, but I'll just add 4 eggs instead of 2.

    Hi, Chef Buck! And hi, Camera Girl wherever you are. Alas, my poor old digestion can't handle legumes any more (beans, lentils, peanuts, etc). Too bad because I always liked them. But I can see this dish working well with various veggies as a savory base for the eggs. You've got the onions & peppers, just needs some eggplant, maybe.

      I don't think my maturing gut is as thrilled with all the foods it used to enjoy, either...the aging process is like fumbling through a maze and trying to stay on a path that keeps splitting...which is the best way to go? My digestive system is definitely not always happy with the route I'm on!

      CG used to be a non-spicy person, but over the years I've brought her around...I think the turning point was when we lived in the International district in Seattle and we were eating out at Asian restaurants all the time...sometimes the food was so spicy I'd have sweat running down my face like I'd been for a jog

      super easy, and not too much to clean up...I like to add sweet pepper and garlic 'cause I almost always have those ingredients on hand, but you can easily leave those ingredients out for an even simpler recipe

      she is definitely missed...I feel like a toddler fumbling with the camera and tripod. I used to always make videos by myself, but over the years I've "tricked" CG into doing the camera work, and now I'm all thumbs.

      I don't eat pork sausage nearly as much as I used to do, so we use more chicken sausage now, and we even buy the meat-free faux "sausages" in the refrigerator case in the produce dept. ...all that makes the pork sausage taste even better when we do get around to using it

      I make an Indian dish called Baingan Bharta with eggplant that is one of my favorites, and CG really likes making eggplant fries...I'd say my go-to use for eggplant lately is using thick slices of it in a burger-type sandwich instead of beef, since I've cut way back on the red meat ruclips.net/video/ARKzR4umzLs/видео.html ...I'll have to branch out and try some different dishes this year....I miss living near international markets where we bought thin-skinned Chinese and Thai eggplant, which were great in spicy stir-frys.

    I like the chicken joke I used to have a girlfriend that was vegetarian and I told her I was having turkey for Thanksgiving and she was not happy. I tried to cheer her up by explaining to her how close a turkey was to a vegetable but she got even more upset. I think that was the biggest kitchen I've ever seen you cook in. I could hear an echo. Black beans and eggs sound good. I like them with rice and mushrooms.

      I tell you....nothing make me miss my wonderful, dinky old Seattle kitchen more than cooking in a BIG kitchen...this kitchen I'm in now is definitely too big--for sure bigger than some of the commercial kitchens I've worked in...bigger is not always better.       I noticed that paler yolk, too...I think I had combined two partial cartons. CG and I do eat a little healthier, although we still eat plenty of treats and sweets and WAY TOO MANY bakery items. I think the healthiest thing we've done over the years is cut down how often we eat and our portion sizes...it doesn't take much now to make me feel full.

      I know how you feel...Ben and Jerry's was $2 off so I bought a pint of New York Chocolate Fudge Chunk or some cool sounding name like that, and when I got to the bottom of the container, I teared up just a little bit myself

      I make lots of meat-free dishes now ( I kinda always have, but as much as we've cut back on meat over the years, we've really cut back on it since the start of the pandemic). When I do buy sausage, it's generally chicken or turkey or a faux meat sausage. And I like recipes where veggies like eggplant or jackfruit are subbed for meat, or tofu. Heavier meals seem to be even HEAVIER than they used to be, so they're definitely an exception for us now. Hope you're having a nice weekend!

    Hello Chef Buck, I have made similar and like it especially for breakfast. But..I do drain those canned black beans to rinse off some of that sodium. Just sayin’ FYI.

      rinsing the beans would have been a good move for me, especially since I was using low-sodium beans and rinsing them would have made them even less salty (in a good way)...I more often than not rinse my beans, but for videos it's somehow more cinematic to just plop them out of the can

      eggs and beans are a classic combo, and the spice makes it for me...sides of tomato and avocado are nice cooling elements, but if that's not handy, a side of sour cream is nice, too
